Strawberry Lemon Blondies are a simple and delicious spring or summer dessert to whip up. These addicting barsare the easiest indulgent treat!

Ingredients
Blondies:
2sticks (1 cup) unsalted butter, softened
¾cupgranulated sugar
1egg
¼cupfresh squeezed lemon juice
2 ¼cupsall purpose flour, divided
½tsp.baking powder
½tsp. salt
1cupfresh strawberries, hulled, quartered and chopped
Icing:
1cupconfectioners sugar
2tbsp. lemon juice
Instructions
Preheat oven to 350 degrees F. Line an 8x8 baking dish with parchment paper or grease with non-stick cooking spray.
In a large mixing bowl, cream butter and sugar. Add in egg and beat until incorporated. Add lemon juice and stir.
In a separate bowl, whisk 2 cups of the flour, baking powder, and salt until combined. Add the flour mixture to wet ingredients bowl and stir until completely mixed in. In a small mixing bowl, toss the strawberries with the remaining 1/4 cup of flour. Add to the blondie batter and fold in.
Pour into prepared baking dish and spread evenly.
Bake for 30-35 minutes, or until set. Do not over bake! Let cool on rack.
In a small bowl, whisk the powdered sugar and lemon juice until smooth. Drizzle and spread over the completely cooled blondies and let set before cutting.
