Strawberry Snowball Cookies

Ingredients

  • 1 cup butter softened
  • cup powdered sugar
  • 2 ¼ cups flour
  • ½ teaspoon salt
  • 1 teaspoon strawberry extract
  • 3-4 drops red/pink food coloring
  • ¾ cup white chocolate chips
  • Extra powder sugar for coating

Instructions

  • In a large mixing bowl, beat butter and powdered sugar together for about 2 minutes.
  • Add in the flour and salt and mix. Add in the extract and food coloring and mix until the color is fully incorporated throughout the dough.
  • Stir in the white chocolate chips. Place in the refrigerator and allow the dough to chill for about 30 minutes.
  • Preheat the oven to 375 degrees.
  • Using a small cookie scoop or a tablespoon, scoop up the dough and roll it into balls.
  • Place on a cookie sheet about an inch apart. Place in the oven and bake for 7 minutes. Do not overbake!
  • Remove and allow the cookies to slightly cool before rolling them in powdered sugar and place them on a cooling rack to finish cooling.
