Ingredients

  • 2 ½ cups all-purpose flour
  • ½ teaspoon salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Red, brown, and pink gel food coloring brown, and pink gel food coloring

Instructions

  • In a medium bowl, whisk together the flour and salt.
  • In a separate large bowl, cream the softened butter and sugar until light and fluffy. Beat in the egg and vanilla.
  • Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  • Divide the dough into three equal parts.
  • Add red food coloring to the first part, pink to the second, and brown to the third. Knead each portion of dough until colors are evenly distributed.
  • Wrap each colored dough in plastic wrap and chill for 30 minutes.
  • Roll out the red and pink dough separately to about 1/4 inch thickness, then cut each into long strips.
  • Alternate the red and pink strips, layering them to create a candy cane stripe effect. Press gently to seal.
  • Roll the layered dough to smooth the stripes.
  • Use a round cookie cutter to cut circles from the striped dough. Then, with a smaller gingerbread man mini cutter, cut out the center of each striped circle.
  • Roll out the brown dough and use the gingerbread man mini cutter to create small gingerbread men.
  • Place a brown gingerbread man cutout in the center of each round striped cookie, filling the cutout space.
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Arrange the cookies on the baking sheet and bake for 8-10 minutes or until edges are lightly golden.
