This Taco Bubble Up Bake is an easy, family-friendly weeknight dinner that even picky eaters love! Ground beef, taco seasoning, enchilada sauce, salsa, green onions, and cheese are tossed with biscuit pieces and baked until the biscuits puff up into a bubbly, cheesy casserole. Top it with your favorite taco toppings for a fun and delicious meal.

Ingredients

  • 1 pound lean ground beef
  • 1 ounce taco seasoning
  • cup salsa
  • 10 ounces mild red enchilada sauce
  • 2 cups shredded cheddar cheese divided
  • ½ cup thinly sliced green onions plus more for garnish
  • 16.3 ounces large refrigerated biscuits
  • Optional taco toppings: shredded lettuce diced tomatoes, sour cream, additional salsa

Instructions

  • Preheat oven to 375°F. Spray a 9x13-inch baking dish with non-stick cooking spray.
  • In a large skillet over medium heat, brown the ground beef until fully cooked. Drain off any excess grease.
  • Stir in taco seasoning, salsa, and enchilada sauce. Mix until well combined.
  • Add 1 cup of the shredded cheddar cheese and the sliced green onions to the beef mixture. Stir to combine.
  • Cut each biscuit into 8 pieces. Gently fold the biscuit pieces into the beef mixture, making sure they are evenly coated.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Bake for 20 minutes.
  • Remove from oven and sprinkle remaining 1 cup of cheese over the top.
  • Return to oven and bake an additional 5 minutes, or until cheese is melted and biscuits are cooked through.
  • Remove from oven and let rest 5 minutes before serving.
  • Garnish with additional green onions and your favorite taco toppings.

Notes

  • Cut biscuits evenly so they cook through properly.
  • If the top browns too quickly, loosely tent with foil.
  • Check center biscuits to ensure they are fully cooked before serving.
  • Letting the casserole rest helps it set and makes serving easier.
