Tex-Mex Sausage Dogs

These Tex-Mex sausage dogs combine your favorite sausage with queso, corn, pico de gallo, and cheese with toasted buns for a delicious meal.

Ingredients

  • 4 sausage links
  • 4 hot dog buns
  • 2 tablespoons olive oil
  • 1 cup store-bought queso blanco
  • 1 cup canned corn drained and rinsed
  • Optional: queso fresco

Pico ingredients:

  • 1 tomato
  • ½ white onion
  • 1 jalapeño
  • 3 tablespoons cilantro
  • ½ lime
  • Pinch salt

Instructions

Make the pico:

  • Dice the onion, tomato, and jalapeño, and add them to a bowl.
  • Chop the cilantro and add it as well. Squeeze half a lime and season with salt to taste.
  • Mix and let sit in the fridge until ready to use.
  • Heat the olive oil in a cast-iron skillet over medium heat until hot.
  • Add the sausage and sauté for 8 to 10 minutes, or until the outside of the sausage begins to brown and caramelize.
  • Optional: For toasted buns, preheat the oven to 350°F. Place the buns on a baking sheet and drizzle with oil. Bake in the oven for 5 minutes or until golden brown.
  • Heat the queso according to the directions on the jar.
  • Assemble the sausage dogs:
  • Place one sausage in each bun.
  • Drizzle with queso and add some corn. Top with a spoonful of pico and sprinkle with cheese, if desired.

Optional: For toasted buns

  • preheat the oven to 350°F.
  • Place the buns on a baking sheet and drizzle with oil.
  • Bake in the oven for 5 minutes or until golden brown.
