These Tex-Mex sausage dogs combine your favorite sausage with queso, corn, pico de gallo, and cheese with toasted buns for a delicious meal.

Ingredients
4sausage links
4hot dog buns
2tablespoonsolive oil
1cupstore-bought queso blanco
1cupcanned corndrained and rinsed
Optional: queso fresco
Pico ingredients:
1tomato
½white onion
1jalapeño
3tablespoonscilantro
½lime
Pinchsalt
Instructions
Make the pico:
Dice the onion, tomato, and jalapeño, and add them to a bowl.
Chop the cilantro and add it as well. Squeeze half a lime and season with salt to taste.
Mix and let sit in the fridge until ready to use.
Heat the olive oil in a cast-iron skillet over medium heat until hot.
Add the sausage and sauté for 8 to 10 minutes, or until the outside of the sausage begins to brown and caramelize.
Optional: For toasted buns, preheat the oven to 350°F. Place the buns on a baking sheet and drizzle with oil. Bake in the oven for 5 minutes or until golden brown.
Heat the queso according to the directions on the jar.
Assemble the sausage dogs:
Place one sausage in each bun.
Drizzle with queso and add some corn. Top with a spoonful of pico and sprinkle with cheese, if desired.
Optional: For toasted buns
