Thanksgiving stuffed potato skins are the ultimate holiday leftover recipe. They're stuffed with turkey, stuffing, and cranberry sauce!

baking potatoes
Salt and pepper

cups
leftover mashed potatoes
or potatoes from the baked potatoes
1 ½
cups
leftover turkey
1 ½
cups
leftover stuffing
½
cup
shredded sharp white cheddar
½
cup
cranberry sauce
Scallions
Instructions
Preheat oven to 400 degrees.
Cut each potato in half lengthwise.
Scoop out the inside of the potato but leave a little so it's stable.
Place the potato skins on a baking tray.
Sprinkle the potatoes with salt and pepper.
In a large mixing bowl combine the mashed potatoes, stuffing and turkey.
Spoon the turkey mixture evenly into the 6 skins.
Sprinkle with the cheese.
Bake for 15 minutes or until golden brown.
Top with the cranberry sauce.
Sprinkle with the scallions.
Serve!
