Just saute your ground beef, (drain the fat) add your enchilada sauce, chili powder and cumin and then the frozen corn. In the meantime cook your pasta. I used rotini this time in a pot of salted water.
Stir it all around and let it simmer for about 5 minutes or so.
Then add the diced green chiles, sour cream, cream cheese, salt and pepper to taste.
Easy Skillet Enchilada Pasta is almost done! I love that this is all done on the stove top. I have made enchilada pastas in the oven that are delicious also. But this is one pan, so not a lot of clean up and so easy and so yummy!
Drain pasta and add to skillet. Toss to combine. Sprinkle cheddar cheese or Monterey Jack cheese into pasta mixture .
As you toss the pasta and cheese it will start melting together.

Ingredients
- 1 ¼ lb ground beef
- 1 10 oz enchilada sauce
- ¾ tsp chili powder
- ¼ tsp cumin
- 4 oz diced green chiles
- 4 oz cream cheese, cubed
- 1 cup frozen corn kernels, thawed
- ½ cup sour cream
- 2 cups cheddar or Monterey Jack cheese
- ¾ lb rotini noodles
- salt and pepper to taste
Instructions
- Cook pasta in boiling salted waterWhile the pasta is cooking brown the ground beef. Drain the fat. Season with salt and pepper, corn, cumin, chili powder. Add enchilada sauce and simmer for 5 minutes.Add cream cheese , chilies, sour cream and stir togetherAdd in cooked pasta
Add cheese and stir until melted. Remove from cooktop and serve.
