Sugar Cookie Bars are perfectly sweet and so much easier than cut out cookies! Thick and chewy and topped with frosting and sprinkles. How delectable!
Sugar Cookie Bars are the best kind of sugar cookie! Seriously guys they are easy to make, no rolling out cookies or dropping off a spoon. Just put everything in a mixing bowl and mix them up and put them in a baking pan and bake.

Bars are definitely one of my favorite desserts. They are one of the easiest dessert you can make. I mean we love sugar cookie but sometimes there just isn’t time in the day for mixing and chilling and rolling and cutting.
These sugar cookies are made a cinch to make in so much less time than it would take for your regular cut out sugar cookies.
You can make these for any occasion and decorate them as you wish. We made these with a Valentine’s Day theme but you can use any color frosting or sprinkle so they are the perfect bar for any time of year.
These bars have a really nice chewy texture to them. They are not dry or crumbley. Maybe that’s why we love them so much. We are definitely a chewy family. And then put some yummy frosting on top… oh boy!!
This recipe for Sugar Cookie Bars is super simple. We added sprinkle to the bars for this recipe but, you can leave them plain or add some mini chocolate chips if you like. The options are really up to you.
How To Make Sugar Cookie Bars:
Makes 1 9×13 baking dish
Cookie ingredients:
1 cup unsalted sweet cream butter, softened
2 cup sugar
4 large eggs
2 tsp pure vanilla extract
4 3/4 cup flour
1 tsp kosher salt
1 tsp baking soda
2 containers of Wilton springtime pearlized jimmies
1 bag of Wilton pink heart sprinkles
Frosting ingredients
2 cup unsalted sweet cream butter, softened
3 1/2 cup powdered sugar
2 tsp pure vanilla extract
3-5 tbsp heavy whipping cream
pink gel food coloring
small angled spatula
Preheat oven to 350 degrees and line a 9×13 baking dish with parchment paper
Using a standing mixer, cream together the butter and sugar until fluffy
Beat in the eggs and vanilla
In a large mixing bowl, whisk together the flour, salt, and baking soda
Gradually mix in to the wet ingredients
Fold in one container of sprinkles into the dough
Scoop dough into the prepared baking dish and lightly flatten with your hands
Place into the oven and bake for 20-30 minutes or until lightly golden brown
Remove from oven and allow to cool completely
Frosting directions :
Using a standing mixer, beat together the butter, powdered sugar, vanilla, and heavy whipping cream.
Beat on medium speed until smooth and stiff peaks form
Beat in a few drops of pink food coloring until combined
Using a angled spatula, frost the top of the cookie bars
Sprinkle with the remaining sprinkles
Cut into bars and enjoy!
