We are loving this Cheesy Hash Brown Skillet. It became an instant hit from the start! This hash brown recipe is easy and cheesy and can be served in so many different ways.

This super simple Cheesy Hash Brown Skillet has become a our go to hash brown dinner side dish.

I mean potatoes are a favorite vegetable in our house for sure! We always try to cook a healthy green veggie along with a starchy potato side dish. Green beans a a bit hit in our house so we tend to go with sauteed green beans.

Hash Brown Skillet

We love weekend breakfasts and brunches that bring the family together. Something more than cereal, oatmeal or toast. Otherwise nobody will even want to get out of bed!

Serve this hash brown skillet for breakfast along side eggs! We like to fry some eggs just so the yolks are still runny and serve them on top.

Do I have to make my own homemade hash browns for this recipe?

HECK NO! I mean you can if you want to do all that work. Use frozen hash browns. We always have them in the freezer for soups and other recipes.

We have also used the fresh hash browns in the dairy section of our market. we really love those and they have them on sale all the time. I just can’t see doing all that work when you don’t have to…

But if you want to make your own you sure can. Here are instructions for you!

How to make hash browns

  • wash and peel potatoes.
  • Shred your potatoes. I use a food processor for this. A hand grater works fine too. Immediately put them into a bowl of cold water. Let soak for a few minutes.
  • Once the potatoes have soaked for a few minutes, squeeze them out and put them on a clean dish towel. Make sure you squeeze out as much water as possible.

And there you have how to make homemade hash browns. Pretty simple and easy just time consuming.

Hash Brown Dinner Side Dish

This cheesy version of hash browns is filled with mix ins and topped with some spice. We love a little bit of spice so we top it off with some jalapeño.

We love the fact that this hash brown skillet doesn’t have any “cream of soup” in it. While we cook with cream soups in recipes sometimes we like to keep things natural and clean.

Feel free to add some of your favorite add ins to this skillet too. Since it is great for breakfast, dinner or as a side the possibilities are endless. When we are making this a complete dinner and serving this with a salad we sometimes will add sliced sausage or kielbasa.

What is the best way to store leftovers?

Store any leftovers in an air tight container. When it comes time to reheat we find reheating in the microwave for a minute or two works best depending on the amount you have leftover. We never usually have much if any.

The first time we made this cheesy veggie hash brown skillet it was an immediate hit! It was gone before the rest of the meal was even have way touched. I thought hmm I should have made two of these.

If you are going to a brunch and looking for an easy brunch idea, a very creative way to serve these is inside muffin cups.

  • Saute the veggies then add the hash browns and cheese. Mix everything together and spoon into muffin tin.
  • Add a little extra sprinkle of cheese on top. Spray the muffin tins with non stick cooking spray.
  • Bake in a 350 oven for about 25 minutes or until golden brown and cooked through. This way everyone has their own personal serving of cheesy hash brown!

Ingredients

  • 2 cups shredded hash browns
  • 1 cup shredded Mexican cheese, divided in half
  • cup diced red or yellow peppers
  • cup diced green peppers
  • ¼ cup salsa
  • ¼ cup chopped green chilies
  • ½ cup heavy cream
  • 1-2 teaspoons cumin

Instructions

  • First cook your peppers over medium-high heat with a little oil, until they start to soften up.
  • Add your hash browns, salsa, and green chilies. Stir, and cook for 5 minutes.
  • Add in 1/2 cup of cheese and heavy cream, cook covered for 6-7 minutes, stirring frequently.
  • Uncover, top with remaining cheese and cumin, cover, and cook a final 5 minutes.
  • Serve topped with cilantro, jalapeños, lime juice, and anything else you prefer.

    I made this yesterday with just a few changes and loved it! I didn’t have any salsa, so I left that out.. I thought about putting a can of rotel in it but wound up deciding against it. I added a small can of mushroooms (browned them first) and a roll of breakfast sausage. It was delish! I ate it for breakfast and lunch! Thank you for your recipe!
