How to make Cabbage roll soup
Step 1:
- In a medium saucepan add in olive oil and your fresh chopped onion and garlic over medium heat to help the vegetables sweat and release their flavor and aroma into your dish.
Step 2:
- Brown your ground beef in with the oil, onions, and garlic. We don’t break it up to much. Just enough to keep it a little bit clumpy.
Step 3:
- Add in your cut carrots and cabbage. Go for a finer dice for a thinker soup or a larger chop for a chunky more filling soup.
Step 4:
- Add in your uncooked rice. Don’t worry the rice will cook directly in the soup picking up all of the flavors you love without soaping up all of the liquid. Add in your beef broth, tomato sauce, sugar, herbs, and spices, string in lightly. Leave your bay leaf whole so that it can be removed easily before serving.
Step 5:
- Cover your pan and allow it to cook for 25 to 30 minutes over medium-low heat until your rice is tender. Stir occasionally to prevent it from sticking to the bottom of the pot. Carefully remove the bay leaf from the pot and serve your cabbage rolls soup hot with a pit of fresh chopped parsley for garnish.
