Bang Bang Cucumbers- are a simple and easy way to use up some of those cucumbers that are overtaking your garden this summer

 

Bang Bang Cucumbers!! –  When I make ribs or grill anything I always make this as a side. We  happen to love cucumbers and this is just one of the ways we enjoy them.

Cucumbers are a perfect side dish to me in the summer months. They are so cool, refreshing and always readily available. This side is so simple to make and we like the little kick the chili powder adds.  

Bang Bang Cucumbers go perfectly with tuna salad for a light lunch or dinner also.

We make this as a side many nights instead of a salad.  It’s one of our go to sides with grilled salmon.  sometimes the simple dishes a the best ones!

Bang Bang Cucumbers

Ingredients

  • 2 Cucumbers
  • 2 tbsp fresh Lemon juice
  • 2 Tbsp Extra Virgin Olive oil
  • Salt and pepper to taste
  • Chile Powder to taste

Instructions

  • Slice cucumbers into desired widths. Mix lemon juice, olive oil, salt , pepper and chili powder. Pour over cucumbers and let sit for at least 2 hours.
