We love Beef Taco Burrito Bowls. So much that they used to be one of our go to take out most of the time.  then we decided to just make our own one night when we couldn’t decide on what to make for dinner and had ground beef to work with. We weren’t in the mood for tacos or meatloaf and just wanted something simple and easy. Let’s face it we always want something simple and easy! So we said “Aha!! let’s make beef taco bowls.” We have everything to make them so why not.

It is so important to have a pantry that has a little bit of everything if you don’t like running to the market. You may think you don’t need black beans but you do! We always try to have certain things in our pantry and let me tell you they do come in handy.

Burrito Bowls can be tailored to your own personal tastes.  We always make it with ground beef that we season with our Homemade Taco Seasoning or you can use store bought taco seasoning and minced garlic. You can also use ground turkey if you like.

Topping are optional with this burrito bowl. This is how we serve it and then we may add some shredded cheese, sour cream, shredded lettuce, chopped tomatoes or any other topping you would normally add to your burrito bowls.

HOW TO MAKE BEEF TACO BURRITO BOWLS:

1 pound ground beef

1 tsp olive oil

1 tsp minced garlic

1 tbsp taco seasoning

1 bag steamed corn

1 cup brown rice

1 can black beans

 Salsa

Avocado

Place 1 cup brown rice and 2 cups of water and prepare on the stove top.

Prepare the toppings by warming the black beans in a small saucepan over medium heat, along with steaming the corn. (I like to get the bags that you can just heat in the microwave, they are good and take only about 4 minutes)

Start the ground beef by placing some olive oil in a large skillet on medium to high heat. Add in the beef and taco seasoning and garlic and mix until combined and cook until brown.

Assemble your bowl by adding 1 cup beef and 1 cup rice into the bowl, and top with corn, beans,, salsa, avocado and your favorite toppings such as shredded cheese, chopped tomato, shredded lettuce, sour cream ect!
