Brown Sugar Meatloaf is one of our all time favorite comfort foods. Meatloaf brings back so many childhood memories and we love the fact that it is so simple to put together.

This easy recipe can be whipped up in no time at all. As most of you know we love easy to make meals in our household. 

What is meatloaf

Meatloaf is ground meat of any kind hat has been combined with other ingredients and formed into the shape of a loaf, then baked. You can add toppings such as ketchup, BBQ sauce, A mix of sauces or make up your own sauce.

Classic Meatloaf

Do you remember your Mom making that classic meatloaf recipe? I remember the smell of it throughout the house as it cooked. We always had homemade mashed potatoes complete with some lumps and green peas. And of course homemade gravy.

It was so good and total comfort food. The best on a cold or even snowy night. Now I’m not saying that meatloaf is only good in colder weather because we make it all year long. It’s the perfect meal any time of year.  It’s just that it brings back such great memories.

Brown Sugar Meatloaf Recipe

This Brown Sugar Meatloaf recipe has been around forever and sometimes when we make it we even double it and make an extra loaf and freeze one for later. 

We always like to make a meal for the freezer to have on hand for a night when we may not feel like cooking or just don’t have the time. Just don’t put the glaze on until your cooking it.  

We used ground beef for this meatloaf but you can use ground turkey or ground chicken if you like. We just prefer ground beef for this. You can also use a mix of ground beef and turkey if you like. We love mixing ground beef and ground pork for meatballs so why not try that for meatloaf too?!

This meatloaf is a breeze to make. Some ground beef,  chopped onion and green pepper, bread crumbs, shredded cheese, ketchup, egg, brown sugar, pepper ect and you have yourself a delicious dinner to pop in the oven.

Sometimes we leave out the pepper and add chopped broccoli. If you don’t like the flavor of veggies in your meatloaf just leave them out. Experiment and see what flavors you like best.

We always add the onions and peppers. sometimes I switch out the green peppers and use red or mix them up depending on what we have in the refrigerator. 

Serve this up with a simple salad and some crusty bread or some mashed potatoes and you have a perfect meal. 

Did I mention that leftovers if there are any make a scrumptious sandwich?! Well yes it does. A perfect filling for a grilled cheese meatloaf sandwich if I do say so myself.

Ingredients

  • 1 ½ lb ground beef
  • ½ small onion, diced
  • ½ green pepper, diced
  • ½ cups bread crumbs
  • 1 1 oz packet Onion soup mix
  • 1 egg
  • ¾ cup shredded cheese,you can use any kind you like
  • cup ketchup
  • ¼ tsp black pepper
  • 2 tbsp light brown sugar
  • 2 tbsp apple cider vinegar

Topping

  • cup ketchup
  • 2 tbsp light brown sugar

Instructions

  • 1.Preheat oven to 375 degrees.
    2. Mix all ingredients in a large bowl. 
    3. Form into a meatloaf  and place in a foil lined pan. ( this makes for easy clean up!)
    4. Bake for 40 minutes. Combine ketchup and brown sugar for the topping and spread over the top of the meatloaf. Bake for 15 minutes or until meatloaf is cooked through. 
    5.Let meatloaf rest 10 minutes before slicing.

    I am rather handicapped at present, I had a rotator cuff repair and have a sling on so am one handed and dont cook but will try recipe as soon as able to.
