Step 1: Make the Truffle Filling

Mix the cookie crumbs and cream cheese with an electric mixer until combined and smooth. Then, divide the mixture between two bowls, adding green food coloring to one bowl and purple food coloring to another and mixing.

Step 2: Roll

Take a teaspoon of each filling color and roll them into one ball, gently swirling the colors. Take about 1/2 teaspoon of filling and roll it into another ball. Then, flatten it and add it to the top of the first ball to create the cauldron shape.

Step 3: Chill

Repeat the rolling process, making as many cauldrons as possible and placing them on a parchment paper-lined tray. Then, chill the truffles in the freezer for at least an hour.

Step 5: Top

Melt the green candy melts the same way as the black, then add the candy to a plastic baggie and snip off the corner. Pipe the green candy on top of the cauldron, making sure to leave some dripping down the edges. Immediately top the melted green chocolate with green candy pearls.

💭 Tips

  • Freeze your truffles for at least an hour to ensure they’re thoroughly chilled and hardened before being dipped into the warm candy coating.
  • Place the truffles on a fork and dip them into the chocolate. This allows the excess to drip off between the tines for the perfect coating.
  • Chill the finished truffles for at least an hour in the refrigerator to ensure the coating is fully set and the truffles are chilled all the way through.
