My husband and I may be adults, but neither of us ever lost our love for Cosmic Brownies. They’re most certainly not a gourmet dessert, but there is just something about those fudgy little brownies and their sprinkles that we can’t quit.

We love them so much, we decided to do a little baking magic and create a Cosmic Brownie pie that brings all of that flavor to any table so everyone can enjoy it!

🔪 How to Make Cosmic Brownie Pie

Making this pie is incredibly simple. You only need to do a little mixing and then baking. That’s it!

Step 1: Prep

Preheat the oven to 350 degrees. Place the pie crust into a 9-inch pie plate and flute the edges of the crust. Set aside.

Step 2: Combine the Wet Ingredients

Whisk the sugar, melted butter, eggs, and vanilla in a large mixing bowl until smooth.

Step 3: Add the Dry Ingredients

Add the flour and cocoa powder and mix until combined. Then, fold in 1 cup of the chocolate chips.

Step 4: Bake

Scoop the batter into the pie crust and top with the remaining chocolate chips. Bake for 40 to 45 minutes.

Step 5: Cool

Cool the pie for at least 30 minutes before adding the ganache.

Step 6: Make the Ganache

Add 1 cup of semi-sweet chocolate chips and heavy whipping cream to a microwaveable bowl and heat on high for 30 seconds. Stir well, then continue to microwave at 15-second intervals, stirring between each interval, until the ganache is smooth and creamy.

Step 7: Decorate

Pour the ganache over the pie and spread it out evenly. Then, sprinkle it with candy coated chocolate chips.

Ingredients

  • 1 pie crust unbaked
  • 1 cup granulated sugar
  • ½ cup butter melted
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • 1 ¼ cups semi-sweet chocolate chips divided

Chocolate Ganache:

  • 1 cup semi sweet chocolate chips
  • ½ cup heavy whipping cream

Instructions

  • In a large mixing bowl, whisk together the sugar, melted butter, eggs, and vanilla until smooth.
  • Add the flour and cocoa powder and mix until combined.

  • Scoop the batter into the prepared pie crust and sprinkle the top with the remaining ¼ cup of chocolate chips.
  • Bake the pie at 350F for 40-45 minutes.
  • Cool the brownie pie for at least 30 minutes before adding the ganache.
  • To make the chocolate ganache, pour 1 cup of semi-sweet chocolate chips and the heavy whipping cream into a microwave-safe bowl and heat in the microwave on high for 30 seconds. Stir well, then continue to microwave in 15 second intervals, stirring between each heating interval until the chocolate is fully melted and the ganache is smooth and creamy.
  • Pour the chocolate ganache over top of the cooled pie and spread out evenly. Sprinkle with candy coated chocolate chips.
