Ingredients

  • 2 cup flour
  • 4 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ cup sugar
  • ½ teaspoon salt
  • 1 ¾ cups milk buttermilk is also good
  • ¼ cup melted butter
  • 1 egg
  • 2 teaspoon vanilla

Instructions

  • In a large bowl, whisk the flour, baking powder, baking soda, sugar and salt. Set aside.
  • In a small bowl, whisk the milk, melted butter, egg, and vanilla.
  • Pour into the flour mixture and slowly whisk all the ingredients together, just until mixed. Do not overmix as it will result in flat pancakes.
  • Heat a frying pan or griddle over low/medium heat and pour about 3 tablespoons of batter onto the hot surface. Let cook until the bubbles start to pop, then flip and cook the other side until lightly golden. Repeat until all the batter has been used.
  • Serve immediately with your favorite toppings!
