🔪 How to Make Slow Cooker Breakfast Casserole with Sausage

This is a slow cooker recipe, so it’s incredibly easy to make. It only takes a few minutes of prep, and then the slow cooker does all the work!

Step 1: Prep

Spray the inside of an 8-quart slow cooker with nonstick spray. Set aside. Then, mix the 2 shredded cheeses in a small bowl and set aside. Mix the cooked sausage, pepper, and onions in a bowl and set aside. Finally, whisk the eggs, milk, salt, and pepper in a bowl and set aside.

Step 2: Layer the Casserole

Layer about 1/3 of the potatoes in the bottom of the slow cooker. Sprinkle 1/3 of the sausage and pepper mixture over the potatoes. Then, sprinkle 1 cup of the shredded cheese over the sausage mixture. Repeat 2 more times ending with the cheese layer.

Step 3: Add the Eggs

When you’ve layered the casserole ingredients, pour the eggs over everything.

Ingredients

  • 12 eggs
  • 1 cup milk
  • 2 pounds hash brown potatoes
  • 1 pound breakfast sausage cooked
  • ½ onion
  • ½ cup red and green bell peppers chopped
  • 1 ½ cups cheddar cheese
  • 1 ½ cup pepper jack cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Spray the inside of the 8 quart slow cooker with nonstick cooking spray. Set aside.
  • Mix the two shredded cheeses together in a small bowl and set aside. Mix the cooked sausage and peppers and onions together in a small bowl and set aside.
  • Whisk the eggs together in a medium sized bowl until well mixed. Whisk in the milk, salt and pepper, set aside.
  • Layer around 1/3 of the potatoes on the bottom of the slow cooker. Sprinkle 1/3 of the sausage mixture all around. Sprinkle 1 cup of the shredded cheese mixture on top. Repeat 2 more times. End with the cheese layer.
  • Once all the layers have been made, pour the egg mixture all over top. Cook on low for 8 hours. (You can do this overnight) Serve and enjoy!
