That’s a big plus in my book. And the flavors for many things such as this salmon is top notch. Cooking the salmon in foil will keep it nice and moist. who wants dried out fish?!

Ingredients

  • 2 1/2 lb salmon fillets
  • 2 tbsp lemon juice
  • 2 tbsp melted butter
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ tsp oregano
  • ¼ tsp crushed red pepper flakes
  • 2 large garlic cloves, minced

Instructions

  • Preheat oven to 375 degrees F. Line a baking sheet with foil. The piece of foil should be big enough to fold over and seal the fish well. 
    In a small bowl, add lemon juice, garlic, and  butter.  Put in microwave to melt butter. Whisk everything together.
    Place salmon on prepared baking sheet.
    Pour the butter mixture over the salmon. Spread the garlic mixture as evenly as possible over the salmon fillets. 
    Season with salt, pepper, oregano, and red pepper flakes.
    Fold the sides of the foil over the salmon. Make sure it is well sealed so the sauce does not leak out .
    Place into oven and bake until cooked for about 20 minutes.
    Open the foil and broil the fish for 2-3 minutes. If you desire. We sometimes eliminate this process. 
    Remove from the oven. 
    Qw serve this with jasmine rice and broccoli or salad. 
     Baking time may vary slightly due to the thickness of the salmon and your oven. Check the salmon every few minutes after the cooking time. Do not over cook!
