Since we love Mexican, but some dishes can be a little heavy side for the summer months, we enjoy this dish a lot. We especially love tacos and make all kinds of tacos all year long. In the summer months we tend to stick to this Grilled Shrimp Taco Recipe.
We love easy recipes and this one is super simple and requires just a few ingredients. Sometimes we may add a few more topping like avocado, Cojita cheese, chopped tomatoes, or pico de gallo. You can add whatever topping you like. We usually keep these pretty simple. The flavor of the shrimp is really what is most important.
DO I HAVE TO GRILL THE SHRIMP?
No you don’t! We even grill the shrimp in a foil packet rather than skewer them. We were skewering them at first then decided to try them in a foil packet and they really came out well. It was so much easier and the flavor was delicious from the cumin, garlic powder and chili powder that we pretty much do it that way all the time now!
And don’t worry if you don’t have a grill, you can just saute them in a skillet on the stove. If you love shrimp and tacos just make them! We make these in the winter on the cook top all the time.
We have been making shrimp or fish tacos about every other week for months now. Yes we are in love with this lighter, healthy alternative to tacos, But what we love most is that it tastes amazing. We only buy peeled, cleaned shrimp. You don’t want jumbo shrimp for a small tortilla.

HOW DO I THAW FROZEN SHRIMP?
Remember to defrost in the refrigerator the night before it’s so much easier. You can thaw it by placing it in the refrigerator overnight in cold salted water. This is what we always do. Also, the day of you can again place it in cold salted water and keep an eye on it since it will become a clump of ice if you don’t. Stir it around to break up the ice clumps (don’t break the shrimp) and you can also change the water.
HOW TO MAKE GRILLED SHRIMP TACO RECIPE:

Prepare shrimp by thawing (and peeling if in shell).

Preheat your grill to medium-high heat (around 375 degrees).

Lay out a large piece of aluminum foil and fold in half. Fold up edges to create a pouch in the middle. Place shrimp in the middle and drizzle with olive oil and half of the lime juice.

Sprinkle on top of the shrimp half of the seasonings; cumin, garlic powder, chili powder, and salt and pepper to taste.

Place packets on the heated grill and cook for 5-8 minutes, or until shrimp are pink and cooked through.

While the shrimp are cooking, shred the cabbage and toss in the remaining half of a lime juice. Set aside.

In a small bowl, mix together the sour cream, hot sauce, and remaining seasonings.

Warm tortillas on grill for 8-10 seconds per side.

To serve, place a layer of the cabbage onto a tortilla and top with the grilled shrimp. Drizzle the yogurt mixture across the top of the shrimp, and garnish with cilantro leaves and a lime wedge.

Ingredients
- 1 lb. large shrimp, peeled and deveined
- 1 tbsp. olive oil
- 3 tbsp. cumin
- 1 tbsp. garlic powder
- 1 ½ tsp. chili powder
- Sea salt and pepper, to taste
- 2 cups thinly sliced red or green cabbage
- 8-10 tortillas
- ½ cup sour cream
- ½ tsp. hot sauce
- 1 handful fresh cilantro, for garnish
- 1 lime for juicing and extra lime wedges for serving
- Foil for grill packet
