Instant Pot Bacon Cheeseburger Soup is perfect if you’re looking for a hearty soup that reminds you of chowing down on a juicy cheeseburger, you’re not going to want to miss this one. This soup has now become a staple in our soup loving home.

Soups are a comfort food for us. We just love them and eat them all year long. The summer heat never plays a part in whether or not we have soup because chances are we are having a bowl. Especially if it’s lobster stew or seafood chowder on the weekends! This soup is a perfect weeknight soup since it’s quick , easy and so delicious!

Instant Pot Bacon Cheeseburger Soup is creamy hearty and full of flavor! You might consider us foodies but we’re also proud of the term soupies as well. (Is that a word? I might have totally made that up!) We relish in the fact that soup is something that we enjoy and have found that some of the best soups that we have ever eaten are the ones that we’ve created ourselves.

Now that the Instant Pot has made its way into our lives, it’s made soup creation that much more simple, too. Recipes and thoughts that used to be daunting are really quite simple now. You’re certain to agree after trying out this simple Instant Pot soup recipe.

Instant Pot Bacon Cheeseburger Soup

How to make the soup: 

 

  • Cook 12 slices of bacon and set aside.
  • Place the ground round and ground pork in the Instant Pot, and turn on the Saute setting.  Cook the ground round/pork until it’s brown, and no pink is visible.
  • Drain off any excess fat. (I used paper towels to remove the fat, by moving the cooked meat to one side of the Instant Pot, and soaking up any fat in the bottom of the pot). 
  • Add the chopped onion, and saute for about 5 minutes, or until the onion browns. 
  • Turn off the Saute setting, and stir the meat and onion together.  Add the garlic salt, seasoned salt, and pepper, and stir.
  • Add the chicken broth, and potatoes, and stir together.

  • Place the lid on the Instant pot, and make sure the pressure valve is set to SEALING, and press the manual button, and cook for 20 minutes. 
  • When the Instant Pot is done, it will beep, and go to OFF. Do a quick release by turning the pressure valve to ‘VENTING’, and allow all the pressure to be released, and MAKE SURE the float valve has dropped down before you remove the lid.
  • When the pressure is released, and the float valve is down, remove the lid to the Instant Pot, and stir the soup. 
  • Add the garlic, cream, and shredded Colby Jack Cheese, and stir well.  Place the lid loosely on the Instant Pot, not to cook, but just to cover the soup.

  • Place the soup in serving bowls, and garnish, or top with shredded cheese, shaved Parmesan, (if desired), bacon and chopped green onions.  

Is this Instant Pot Bacon Cheeseburger Soup high in fat?

Due to the fact that it has bacon and quite a bit of cheese added to it, it’s going to be higher in fat than other soup options. But what we can tell you is that it’s so worth it! That flavor of the bacon takes this soup recipe right over the top. If you wanted to cut out some of the fat, you could always reduce some of the bacon but seriously why would you want to do that? 

Can I make this soup with ground turkey or ground chicken? 

You sure can! We have used ground turkey and ground beef mixed. Or you can just use ground turkey by itself if you like. We happen to like the taste of ground beef best so always go with that. This recipe is very flexible so can be made to your taste. 

Does this soup really taste like a cheeseburger?

We think it does! Of course, it’s all up to you and your taste buds but if you’re craving that cheeseburger flavor, we feel confident that you’ll get that with a bowl of this delicious soup.

Ingredients

Notes

NOTE:  If you're not sure where the 'FLOAT VALVE' is on your Instant Pot, see your manual to identify the valve. (mine is right behind the pressure valve, on top of the lid, and it's a small hole in the lid that contains the float valve.  It moves up when the Pot is cooking, and will drop down when the pressure has all been released).
