Mint Chocolate Cheesecake Fudge
This unique recipe was a throw together recipe that we think turned out super delicious. Mint Chocolate Cheesecake Fudge can be whipped up in less than 30 minutes from start to finish!
When’s the last time you had a delicious treat of mint, white chocolate and cheesecake? We just love the combination of fudge, mint and cheesecake so this recipe my friends is a winner! Mint Chocolate Cheesecake Fudge is perfect any day of the week but of course a must serve at your St. Patrick’s day get togethers.
What kind of extract do you use?
Always use mint extract. Never use peppermint. Peppermint will give you a candy cane flavor and you don’t want that. You want this to have a nice mellow minty flavor.
I think we can all agree that eating fudge is always a big hit in our family. We love all kinds of chocolate and cheesecake is always a winner so why not mix the two together! Add some mint extract and you have the most delectable flavor.

How To Make Mint Chocolate Cheesecake Fudge
- Start by spraying your pan with cooking spray and cover bottom and sides of the pan with parchment paper. Once done, set aside. Grab a medium-size bowl and add in the butter and white chocolate chips. Place in the microwave and melt in 30-second bursts until totally melted and smooth. (Make certain that you don’t cook for more than 30 seconds at a time or the mixture will burn)
- Once melted and smooth, mix the salt and mint extract into the melted mixture.
- Add your instant cheesecake pudding mix and milk into a small bowl and whisk until it’s smooth. (It will be thicker than regular pudding at this point)

Take your mixture and fold it into the melted chocolate.

Next, slowly add in the powdered sugar at about ¾ cup at a time. You can easily do this step with a spoon or hand mixer if you want. Continue to add in powdered sugar until the mixture is smooth and you have that fudge consistency that you’re going for. If it appears too thick, all you need to do is add a tablespoon of milk. If it appears too runny, simply add in 1-2 tablespoons of powdered sugar.

Once done, take and separate the mixture between two bowls, evenly. Take your green food coloring and add to one bowl. Add by 1-2 drops at a time.

Using a spoon, take turns adding a layer of green fudge and white fudge until the bottom of the pan is covered. Then, take a knife/chopstick/skewer and mix the mixture up and down in swirls. Repeat until the fudge mixture is done.

Once done, put sprinkles on top and cover with foil. Place in the fridge until the fudge is firm.

Once firm, cut and enjoy!
Mint and white chocolate go perfectly together. You really need to try this recipe if you love mint, white chocolate or cheesecake. The combination of the three is so fabulous. You need this on your must make list.

Ingredients
- 18 oz. bag of white chocolate chips
- ½ cup unsalted butter softened
- ⅓ cup milk
- 1 3.4-ounce box of cheesecake flavor instant pudding
- 3 cups powdered sugar
- 1 tsp. mint extract
- ½ tsp. sea salt
- green food coloring
- gold sprinkles or sprinkles of your choice (optional)
You will also need:
- 8 x 8 baking pan lined with parchment paper
- Cooking spray
- 1 knife, chopstick, or wooden skewer
