🔪 How to Make These Pumpkin Cookies With Cream Cheese Frosting

In a small bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
In a large bowl, using an electric mixer, beat the butter, sugar, and brown sugar until light and fluffy. Add in the pumpkin puree, egg, and vanilla, and cream some more. Add in dry ingredients and mix just until combined.

- ¾ cup sugar
- ½ cup brown sugar
- 1 ¼ cup pumpkin puree

Frosting:
- 8 ounces cream cheese softened
- ¼ cup butter softened
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- 1 ½ cup powdered sugar
Instructions
- Preheat the oven to 350 degrees.
- In a small bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
- In a large bowl, using an electric mixer, beat the butter, sugar, and brown sugar until light and fluffy.
- Add in the pumpkin puree, egg, and vanilla, and cream some more.
- Add in dry ingredients and mix just until combined.
- Use a cookie scoop (about a tablespoon in size) and drop cookies onto a baking tray about 2 inches apart.
- Gently press down to flatten each cookie slightly.
