How can I describe these bars? They are a mix of a brownie bar and a bit of banana bread. Two of of our favorite things. You know how sometimes you just can’t make up you just can’t make up your mind if you want a brownie or maybe some a little healthy? Well this isn’t healthy at all! But it does have bananas in it so we like to rationalize that at least these bars have some fruit in them.

Are these bars cake like? 

No these bars are very fudgy and not cake like at all. We have made many different recipes for chunky monkey bars and some are cake like but these are not. These are ooey gooey and fudgy! That’s why we think they are the best! 

I don’t know about you but we are always looking for ways to use ripe bananas. Sometimes though we buy extra bananas just so we can make desserts like these bars. I know it’s just an excuse but it’s a really good one.

Back to the bars… you will drool while you’re eating them. Seriously they are that good. The bars are fudgy and the chocolate chips are gooey. They are so rich and decadent that I usually cut them into smaller bars But that doesn’t work since I just grab another one.

If your a chocolate lover (and who isn’t) this recipe has 2 kinds of chocolate in it. Dark chocolate chunks and also semi-sweet chocolate chips. You can never have too much chocolate if you ask me.  

How to make The Best Chunky Monkey Bars:

  • Preheat oven to 350 degrees.
  • Cream butter and sugars.
  • Mix in the eggs, vanilla and bananas.
  • Add in the flour, baking soda and salt and mix together.
  • Fold in the chocolate chunks.
  • Prepare a 9×13 pan with non-stick cooking spray and parchment paper.
  • Pour Monkey Bar batter into the pan and spread evenly. 
  • Top with chocolate chips.
  • Bake for 30-35 minutes.

Notes: for a chewier gooey Monkey Bar, omit baking soda.

Can you use milk chocolate chips in these bars? 

Yes you can. You can use any kind of chip you like. We used white chocolate chips once. We happen to love the flavor of white chocolate. Mix them all in if you want. I mean hey they are chocolate it will all taste good! We just prefer the original best. 

Can these bars be frozen? 

They sure can! To freeze them wrap them in plastic wrap then place in a freezer bag. When your ready to eat them place in the fridge over night to defrost.

Ingredients

  • 1 ¼ cups packed brown sugar
  • ¾ cup granulated sugar 
  • 1 cup unsalted butter, softened to room temperature
  • 2 tsp. pure vanilla extract
