What is zest?

Zest is actually from the outer area of the orange, on the rind. This is used in a lot of recipes.Many people tend to shy away from it because they are unaware of how to zest properly. But seriously it is so easy! 

How do you zest an orange?

Believe it or not, it’s not that hard to do. All you need is an orange and a zester and you’ll be done in no time at all. If you’re looking for a way to zest, start by making certain that you clean the outer area of the orange really well. Dry it off before you get started.

Grab you zester and rub it gently on the orange peel back and forth. Have a bowl underneath that will catch the “shavings” and make certain that you stop zesting if you see white on the orange peel. This means that you’ve gone down as far as you can go and you need to rotate the orange and zest in another area.

Your actual zest should be orange in your bowl.

How to make these Orange Sprinkle Cookies: 

  1. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  2. Add the orange zest, vanilla extract, and one of the eggs; mix until combined. Add the second egg and mix well.
  3. In a medium mixing bowl, whisk together the flour, baking powder, and salt. Add the dry mixture to the wet mixture and beat with an electric mixer until combined.
  4. Cover the bowl with plastic wrap or a clean kitchen towel and refrigerate the dough for 30 minutes.
    1. Roll the chilled dough into 30 1-inch balls and place on cookie sheets lined with parchment paper leaving at least 1 inch of space between each cookie. Place the cookie sheets in the refrigerator to chill the dough balls for 30-60 minutes before baking.
    2. While the dough balls chill, preheat the oven to 350F degrees.
    3. Bake the cookies for 10 minutes at 350F until set and lightly browned on the bottom. Transfer the cookies to a wire cooling rack to cool completely to room temperature before frosting.
    4. While the cookies cool, pour the powdered sugar and vanilla extract into a small mixing bowl. Add the cream or milk 1 tablespoon at a time, stirring well between each addition, until the frosting reaches the right consistency. You want the frosting to be just thin enough to drizzle, but not so thin that it runs right off the cookies. If the frosting becomes too thin, add more powdered sugar. Stir in the orange zest.
    5. When the cookies are completely cooled, frost the top of each cookie with a teaspoon of frosting, then add the sprinkles.

Ingredients

Sprinkle Cookies

  • 6 tbsp. butter, softened
  • cup granulated sugar
  • 1 tbsp. fresh orange zest
  • 1 tsp. vanilla extract

  • ¼ tsp. salt

  • 1 ½ cups powdered sugar
  • ½ tsp. vanilla extract
  • 4-5 tbsp. heavy whipping cream or 3 tablespoons milk
  • 1 tbsp. orange zest
  • Sprinkles
