Triple Chocolate Muffins

Triple Chocolate Muffins – We are calling these muffins because they aren’t frosted. Some would call them cupcakes. Honestly they don’t need frosting because they are very rich on their own. And the texture is much different than a cupcake too.

 

If you like the muffins from Costco or Sam’s Club you will love these. Only these are in smaller form. The first time we made them we made them in large muffin cups and found they were just too big so we decide to make the smaller version instead. 

 

If your a chocolate lover you will LOVE this muffin! They are perfect for breakfast, dessert or a snack.

Triple Chocolate Muffins also freeze well should you not want 24 muffins in the house. Maybe you can share with a friend. Or you can also half the recipe. Maybe make the huge muffins and get 12 muffins instead.

Triple Chocolate Muffins

Ingredients

  • 3 3 eggs, beaten
  • ½ cup oil
  • ¼ cup water
  • ½ cup milk
  • 1 tsp vanilla
  • 1 triple chocolate fudge cake mix
  • ¾ cup sour creram
  • 1 3.9 oz pkg instant chocolate pudding
  • 2 cups plus 1/2 cup semisweet chocolate chips

Instructions

  • Preheat oven to 375 degrees and line muffin pans with liners.
    In a large bowl, add beat eggs. oil, milk, water, vanilla, and beat .
    Stir in sour cream, and then add cake mix and pudding mix. Do not over mix.
    Stir in 2 cups chocolate chips and fill muffin liners  about ¾ full. Drizzle a few of the other 1/2  cup chocolate chips over each muffin. (If you run out that's ok they are chocolately enough!)
    Bake for about 18 minutes or until a toothpick comes out clean.
    Remove from muffin pans and let cool . Store in an airtight container or airtight bag and freeze some for later.
