Ingredients

  • 4 pounds Whole chicken
  • 1 Lemon
  • 2 tablespoons Olive oil
  • 3 Sprigs fresh rosemary
  • ¼ cup Butter melted
  • 3 Sprigs Fresh thyme
  • 1 Head of garlic
  • 1 tablespoon Minced garlic
  • ½ teaspoon Ground sage
  • ½ teaspoon Poultry seasoning
  • Salt and pepper to taste

Instructions

  • Heat the oven to 425 degrees.
  • Remove the packet of innards from the inside cavity of the chicken, and pat it dry.
  • Drizzle the butter and olive oil over the chicken.
  • Squeeze the juice from half a lemon over the chicken.
  • Season the chicken with the sage, poultry seasoning and salt and pepper to taste.
  • Tie the legs of the chicken together with butcher's twine.
  • Place the other half of the lemon, the head of garlic and the fresh herbs into the cavity of the chicken.
  • Place the chicken breast side up into a casserole or roasting dish.
  • Roast the chicken for 1 hour and 30 minutes.
  • Garnish with fresh parsley before serving if desired.
