Whole chicken

Lemon

Olive oil

Sprigs fresh rosemary

Head of garlic

Minced garlic

teaspoon
Ground sage
½
teaspoon
Poultry seasoning
Salt and pepper to taste
Instructions
Heat the oven to 425 degrees.
Remove the packet of innards from the inside cavity of the chicken, and pat it dry.
Drizzle the butter and olive oil over the chicken.
Squeeze the juice from half a lemon over the chicken.
Season the chicken with the sage, poultry seasoning and salt and pepper to taste.
Tie the legs of the chicken together with butcher's twine.
Place the other half of the lemon, the head of garlic and the fresh herbs into the cavity of the chicken.
Place the chicken breast side up into a casserole or roasting dish.
Roast the chicken for 1 hour and 30 minutes.
Garnish with fresh parsley before serving if desired.
