Equipment

  • Medium skillet or sauté pan
  • Cutting board
  • sharp knife
  • wooden spoon or spatula
  • Measuring spoons and cups
  • Microwave or dry skillet for warming tortillas

Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound boneless skinless chicken breast diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 3 tablespoons unsalted butter
  • 1 tablespoon garlic minced
  • 2 tablespoons honey
  • ½ cup BBQ sauce
  • 1 tablespoon apple cider vinegar
  • 8 fajita-size or street taco tortillas

Instructions

  • Heat the vegetable oil in a medium skillet over medium-high heat.
  • Add the diced chicken, salt, pepper, and onion powder. Stir occasionally and cook for 7–9 minutes, or until the chicken is fully cooked and lightly browned.
  • Transfer the chicken to a plate and set aside.
  • Reduce the heat to medium-low.
  • Add the butter and minced garlic to the skillet and cook for about 30 seconds, stirring constantly so the garlic does not burn.
  • Stir in the honey, BBQ sauce, and apple cider vinegar until combined.
  • Return the cooked chicken to the skillet and toss until fully coated in the sauce.
  • Reduce the heat to low and let the chicken simmer for 1–2 minutes.
  • Meanwhile, warm the tortillas in the microwave for a few seconds or heat them in a dry skillet.
  • Fill each tortilla with the saucy chicken.
  • Top with red onions, cilantro, or any toppings you like. Serve immediately.

Notes

  • Store in an airtight container in the fridge for 2-3 days.
  • Don’t want tortillas? The chicken would be great over chips or over rice!
  • Want some spice? You can add some red pepper flakes to the sauce before adding the chicken.
