Loaded Potato Meatloaf Casserole

Ingredients

Ingredients:

  • 1 pound ground beef
  • 1 medium onion
  • 6 garlic cloves divided
  • 1 cup seasoned bread crumbs
  • 1 Tablespoon worcestershire sauce
  • 1 egg beaten
  • ½ bbq sauce

Potato Layer

  • 2 ½ pounds potatoes
  • ½ cup butter
  • 4 ounces cream cheese
  • ½ cup heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1-2 Tablespoons fresh chives
  • 1 ½ cups shredded cheddar cheese

Instructions

  • Preheat the oven to 375 degrees. Spray a 9 x 13 baking pan with nonstick cooking spray and set it aside.
  • In a large bowl, place the ground beef, chopped onion, 1 minced garlic clove, the bread crumbs, worcestershire sauce, egg and bbq sauce and mix well to combine.
  • Spread the mixture into the bottom of the baking pan and spread in an even layer.
  • Place the pan in the oven and bake for 30 minutes.
  • In the meantime, peel the potatoes and remaining garlic cloves and place them in boiling water and cook until tender.
  • Drain the water and mash the potatoes and garlic.
  • Add the butter, cream cheese, heavy cream, salt and pepper. Stir to combine well.
  • Add in the chives and mix.
  • Remove the cooked beef, and drain any excess grease.
  • Spread the mashed potatoes in an even layer over the top of the beef.
  • Sprinkle the cheese over the top of the potatoes and return the pan to the oven and bake for another 10 minutes, or until the cheese is fully melted.
  • Remove and garnish with fresh parsley, or extra chives and serve hot!

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days.
