Slow cooker gnocchi soup is loaded with lean chicken, vegetables, Italian seasoning, and of course, gnocchi! It's a hearty comfort dish!

Ingredients
3
boneless skinless chicken breasts

cups
matchstick carrots
1
cup
diced onion
2
stalks of celery
diced
3
cloves
garlic
minced

Italian seasoning

chicken stock

pound
potato gnocchi
2
cups
heavy cream
2
cups
fresh spinach leaves
1 ½
cup
shredded parmesan cheese
Salt and pepper to taste
Instructions
To your slow cooker add the chicken, carrots, onion, celery, garlic, italian seasoning and chicken stock.
Cover and cook on high for 4 hours or low for 6.
30 minutes before you are ready to serve remove the chicken and chunk the chicken up with two forks.
Add the chicken back to the slow cooker with the gnocchi and heavy cream and cook for 30 more minutes.
Right before serving stir in the spinach and cheese.
Serve!
