🔪 How to Make Slow Cooker Gnocchi Soup

This recipe is incredibly easy to make. The entire thing is made in the slow cooker, so prep time is minimal. You’ll be in and out of the kitchen in no time.

Step 1: Cook the Chicken and Vegetables

Add the chicken, carrots, onion, celery, garlic, Italian seasoning, and chicken stock to your slow cooker. Then, cover and cook on high for 4 hours or on low for 6 hours.

Step 2: Shred the Chicken

30 minutes before serving, remove the chicken and shred it with two forks.

Step 3: Finish the Soup

Add the shredded chicken back to the slow cooker. Then, add the gnocchi and heavy cream and cook for another half hour. Right before serving, stir in the spinach and cheese. Enjoy!

Ingredients

  • 3 boneless skinless chicken breasts
  • 2 cups matchstick carrots
  • 1 cup diced onion
  • 2 stalks of celery diced
  • 3 cloves garlic minced
  • 11 teaspoon Italian seasoning
  • 4 cups chicken stock
  • 1 pound potato gnocchi
  • 2 cups heavy cream
  • 2 cups fresh spinach leaves
  • 1 ½ cup shredded parmesan cheese
  • Salt and pepper to taste

Instructions

  • To your slow cooker add the chicken, carrots, onion, celery, garlic, italian seasoning and chicken stock.
  • Cover and cook on high for 4 hours or low for 6.
  • 30 minutes before you are ready to serve remove the chicken and chunk the chicken up with two forks.
  • Add the chicken back to the slow cooker with the gnocchi and heavy cream and cook for 30 more minutes.
  • Right before serving stir in the spinach and cheese.
  • Serve!
