Slow Cooker Million Dollar Chicken

Slow cooker million dollar chicken features tender chicken and potatoes in a rich, creamy sauce and topped with a butter Ritz cracker topping.

Ingredients

  • 1 ½ pounds chicken breast cut into bite size pieces
  • 1 ⅕ pounds baby potatoes
  • 1 cup cottage cheese
  • ½ cup sour cream
  • 10.75 ounces cream of chicken soup
  • ½ teaspoon garlic salt
  • ½ teaspoon onion powder
  • 2 cups sharp cheddar cheese shredded, divided
  • 6 scallions chopped, divided
  • 1 sleeve ritz crackers I used garlic butter flavor, crushed
  • 6 tablespoons butter melted

Instructions

  • Add your chicken and potatoes to the slow cooker.
  • In a mixing bowl combine the cottage cheese, sour cream, cream of chicken soup, garlic salt and onion powder.
  • Stir the the cottage cheese mixture into the slow cooker combining with the chicken and potatoes.
  • Cover and cook on low for 4-6 hours until the potatoes are fork tender.
  • Stir in 1 cup of shredded cheese and half of the chopped scallions.
  • In a mixing bowl combine the crushed crackers with the melted butter and remaining shredded cheese and scallions.
  • Sprinkle the cracker mixture all over the top and place the lid back on for 15-20 minutes until cheese is melted.
  • Serve!
