- 3 tablespoons vegetable oil
- 1 onion diced
- 2 red bell peppers sliced
- 5 cloves garlic minced
- 1 pound spicy Italian sausage
- 1 teaspoon oregano
- 1 teaspoon Italian seasoning
- ⅓ cup tomato paste
- 28 ounces crushed tomatoes
- 4 cups chicken broth
- ½ cup milk
- 1 cup water
- 16 ounce lasagna noodles broken into 4 squares each
- 1 cup shredded mozzarella
- ½ cup grated Parmesan
- Fresh parsley optional
In a large pot, heat vegetable oil over medium high. Add onions and peppers and cook 4 to 5 minutes until slightly softened.
Add garlic and spicy Italian sausage. Cook until the sausage browns and crumbles.
Stir in oregano, Italian seasoning, tomato paste, crushed tomatoes with juice, chicken broth, milk, and water. Mix well.
Bring the mixture to a boil. Add the broken lasagna noodles.
Reduce heat and simmer until noodles are tender, about 10 minutes, stirring occasionally to prevent sticking.
Stir in mozzarella.
Ladle into bowls and top with extra mozzarella, Parmesan, and parsley if desired.
