Chocolate Orange Shortbread Cookies

These cookies are really wonderful.  They’re easy to make, bake up beautiful, and taste like they came from the bakery!  The chocolate with orange is so good, and then the crunchy shortbread that just melts in your mouth, make these one of the best cookies you’ll ever eat. 

Trust us, this is definitely one for the favorites file! This is what we call a double batcher because we bake a double batch each and every time! They are thick and chewy and so full of flavor and so hard to resist!  

What we love about these cookies is that they’re a different taste and flavor than regular cookies. Anyone can whip up a batch of chocolate chip cookies, but how many people do you know that have tried to create something as awesome as this trio combination? Anytime we make these and take them with us, they’re literally gobbled up in seconds. Seriously, seconds.

Do I have to add in the orange zest?

You don’t have to do anything you don’t want to, but if you don’t want to add orange zest, don’t. This will, however, take away the whole orange taste that goes perfectly with these cookies. We say give it a try before cutting it out completely. It’s really a delicious flavor that is added without being overpowering at all. 
 

How do you store these homemade cookies?

You’d store them just as you would any baked cookies. Add them to an airtight bag or container to keep them as fresh for as long as possible. They should be best for 4-5 days after baking them but I highly doubt that they’re going to last that long!

Ingredients

For The Cookies

  • 1 cup butter, softened

  • ½ cup sugar

  • 3/4 cup mini chocolate chips
  • 2 cups flour
  • 1 tsp. vanilla extract
  • 1 tbsp. orange zest

For The Chocolate and topping

  • 4 squares of chocolate bark – to melt

  • 1 tbsp. heavy cream
  • orange zest to sprinkle on chocolate


Instructions

  • In the mixing bowl of a stand mixer, cream the butter and sugar, until it's light and fluffy.

  • Add the vanilla, and orange zest, and mix well.  Add the flour a little at a time until all has been added.

  • Scrape down the sides of the mixing bowl, and blend again. Add mini chocolate chips and fold in.
  • Place the cookie dough on a large piece of parchment paper, and form a log.  Roll the parchment paper around the log of cookie dough, and chill for an hour in the refrigerator.

  •  Remove the log of cookie dough from the refrigerator, and slice the cookies in 1/8 inch slices, and place on a parchment lined cookie sheet.

  • Bake at 350 degrees for 20 -25 minutes, or until cookies are golden brown.  When cookies are done, remove from oven to a wire rack to cool.

  • Melt the chocolate in a microwave safe dish, at 10 second intervals, until the chocolate starts to soften.  Stop the microwave and stir the chocolate.  Stir in the heavy cream, until it's well blended.  You can place the chocolate back in the microwave for 10 seconds,if it is not completely melted



  •  Stir well, and dip one end of the cookies in the chocolate, and place them on the wire rack for the chocolate to set.  Sprinkle the chocolate with orange zest before it hardens on the cookies.  When the chocolate sets (about an hour) serve and Enjoy!
