Ingredients
STRAWBERRY FILLING
- 6 ounces fresh or frozen strawberries, quartered
- 1 tablespoons granulated sugar
- 1 tablespoons cornstarch
- 2 tablespoons water
- 1/2 tablespoon lemon juice
- a few drops of red food coloring
CAKE AND CREAM
- 1/2 of an angel food cake, cut into 1-inch cubes
- 8 ounces cream cheese, softened to room temperature
- 1/3 cup evaporated milk
- 1/3 cup sugar
WHIPPED CREAM
- 3/4 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Stir together all of the strawberry filling ingredients in a medium saucepan. Bring the mixture to a simmer and cook until thickened, 5-7 minutes, stirring often. Remove from the heat. Add more drops of food coloring if needed.
- For the cake and cream layer, in a large bowl, whip together the cream cheese, evaporated milk, and sugar until smooth and creamy. Fold in the angel food cake cubes.
- For the whipped cream, beat together the heavy cream and powdered sugar until soft peaks form.

Yes you can. It will stay well for about 3 days. We always make it the night before we intend to serve it.

Yes. Unless you want to double the recipe. this is made in an 8×8 pan. If you want you can double everything and use a 9×13 pan
