I love the flavors of the lime and the lemon. It really brightens the dish nicely! It  is perfectly juicy and tender, easy to make. And I just love anything that is easy to make that tastes as good as this does! 

 

Baked Citrus Chicken With Wine has become a staple in our house. First I always have chicken in my freezer. And always have wine and lemon. And the spices are always in my pantry.

 

Mushrooms and onions are always on my grocery list.  I swear I use mushrooms more than I use most vegetables. You can use white mushrooms instead of crimini both work just as well.

Ingredients

  • 4 split chicken breasts cut in 1/2
  • sea salt and pepper to taste
  • 4 garlic cloves thinly sliced
  • 1 tsp dried oregano
  • 1 med onion, cut into chunks
  • 12 crimini mushrooms cut into quarters
  • 1 pum tomato cut into chunks
  • 1 lime
  • ¼ cup fresh lemon juice
  • ¼ cup white wine
  • 1 lemon
  • ¼ cup chicken stock
  • 6 tbsp olive oil

Instructions

  • Preheat oven to 400 degrees F.
    Combine salt, pepper, garlic, and oregeno.
    Lay chicken pieces into a 11" x 13" baking pan. Sprinkle seasonings over chicken.
    Pour olive oil over chicken
     Add onions,  mushrooms, tomato, and garlic to pan
    Pour lemon juice, white wine and chicken stock over chicken and vegtebles
    Slice lemon  and lime into  slices. Top chicken piece with a lemon slice.
    Bake for 35 -45  minutes at 400 F, until golden brown and juices are clear colored.
