🔪 How to Make Cheese Stuffed Bacon Wrapped Meatloaf

  1. In a large bowl, add ground beef, milk, oats, bread crumbs, egg, garlic powder, Salt, pepper, and paprika and mix till well combined. Set aside.

  1. In a small bowl, combine softened cream cheese, Salt, and Garlic powder.

  1. Pour the ground beef mixture into a rectangle on a large piece of foil or parchment.

  1. Evenly spread the cream cheese mixture down the middle of the ground beef rectangle. Sprinkle with jalapeños and Cheddar cheese.

  1. Roll up the beef rectangle, starting from the short side.

  1. On another piece of foil lay seven strips of bacon vertically parallel to one another. Fold every other strip of bacon down 3 inches. Lay a strip of bacon horizontally across the unfolded strips of bacon. Unfold the folded bacon, replacing it in its former position over the horizontal strip of bacon.

  1. Fold the strips of bacon that were not folded the first time and again lay a strip of bacon horizontally across the unfolded strips. Repeat until the lattice is complete.

  1. Unroll the stuffed meatloaf onto the bacon latticework and wrap the bacon around the meat roll.

  1. Invert the meatloaf onto a large, greased baking sheet. Brush with half of the BBQ sauce and bake.

  1. Peel and cut the potatoes and carrots into pieces. Add to a large bowl and toss with Salt and some oil.

  1. Bake until the vegetables are tender, and the meatloaf is done.

Storage – Transfer leftovers to an airtight container and pop them in the fridge. They’ll stay fresh for up to 3–4 days.

Ingredients

  • 2 pounds ground beef
  • 1 cup milk of choice
  • 1 cup rolled oats
  • cup Italian bread crumbs
  • 1 egg
  • 1 cup shredded cheddar cheese divided
  • 1 ½ teaspoon garlic powder
  • 4 ½ teaspoons salt divided
  • ½ teaspoon pepper
  • 1 teaspoon Paprika
  • 8 ounces Cream cheese
  • 12 slices bacon
  • 2 jalapeños diced
  • 1 cup BBQ sauce
  • 4 large carrots
  • 5 large russet potatoes

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl, add ground beef, milk, oats, bread crumbs, egg, 1/2 tsp. garlic powder, 2 tsp. Salt, pepper, and paprika and mix till well combined. Mixture will be very moist. Set aside.
  • In a small bowl, combine softened cream cheese, 1/2 tsp. Salt and 1 tsp. Garlic powder.
  • On a large piece of foil or parchment, pat out the ground beef mixture into a 1″ thick rectangle.
  • Evenly spread cream cheese mixture down the middle of the ground beef rectangle. Sprinkle with jalapeños and Cheddar cheese.
  • Roll up the beef rectangle, starting from the short side, making sure to remove the foil as you go.
  • On another piece of foil, lay 7 strips of bacon vertically parallel to one another. Fold every other strip of bacon down 3 inches.. Lay a strip of bacon horizontally across the unfolded strips of bacon. Unfold the folded bacon, replacing it to its former position over the horizontal strip of bacon.
  • Next, fold the strips of bacon that were not folded the first time and again, lay a strip of bacon horizontally across the unfolded strips. Repeat until lattice is complete.
  • Unroll the stuffed meatloaf onto the bacon latticework and wrap the bacon around the meatroll. The bacon will not reach all the way around the meatloaf.
  • Invert meatloaf onto a large greased baking sheet.
  • Brush with half of bbq sauce and bake for 25 minutes.
  • In the meantime, peel and cut the potatoes and carrots into 1 1/2 in. Pieces. Add to a large bowl and toss with 2 tsp. Salt and some oil.
  • Remove the meatloaf from the oven after 25 minutes, add the potatoes and carrots and then bake for another 40 minutes or utnil the vegetables are tender and the meatloaf is done.
