This delicious recipe is one that we make all year long. It’s great for the fall and winter because it’s nice and hot, but it’s also a delicious spring and a summer recipe because of the delicious kielbasa sausage and the potatoes. After all, potatoes are amazing any time of year.

We love to make this cheesy kielbasa hashbrowns casserole for a delicious dinner and then eat the leftovers the next day for breakfast and lunch. It’s also a delicious dish to bring to potlucks and get-togethers. It’s easy to serve because everyone can simply spoon out as much as they want!

Cheesy Kielbasa Hashbrown Casserole

This is one of the easiest and most delicious casseroles you’ll ever make. It’s absolutely filled with delicious flavor but not a lot of ingredients. It’s a no-nonsense, nothing fancy dish that comes together super quickly and always tastes so good!

Tasty kielbasa sausage is combined with hashbrowns, onion, and cheddar cheese, and then it’s all topped with cream of chicken soup and milk to create a rich, cheesy dish that is so hearty and filling. It’s a dish that sticks to your ribs and keeps you going all day or satisfies you for the evening.

With each and every bite, you’ll enjoy all the sausage, potato, and cheese goodness, and you’ll be able to appreciate it because it didn’t take all day to make.

Ingredients

It only takes a handful of ingredients to make this delicious casserole. They’re all readily available at your local grocery store, too. Stock up on the ingredients on your next trip to the store, or simply make a quick jaunt over when you need them. It’s that easy to find them all.

  • Fozen, cubed hashbrowns, thawed
  • Kielbasa, sliced and halved
  • White onion, finely diced
  • Salted butter, melted
  • Cheddar cheese, shredded
  • Cream of chicken soup
  • Milk

Instructions

Making this cheesy kielbasa hashbrowns casserole is even easier than the shopping list. There’s almost no work involved whatsoever. You’ll basically be mixing everything together and then letting the slow cooker do the heavy lifting.

Step 1: Prep the Slow Cooker

Spray your slow cooker with non-stick cooking spray.

Step 2: Add the Solid Ingredients

Toss the hashbrowns, kielbasa, onion, and cheese together and add to the slow cooker.

Step 3: Mix the Wet Ingredients

In a medium bowl, whisk together the melted butter, cream of chicken, and milk until smooth.

Step 4: Combien All Ingredients

Pour the cream of chicken mixture over the hashbrowns, kielbasa, onion, and cheese, stirring until combined. Sprinkle with cheddar cheese.

Cover the slow cooker and cook on high for three hours.

Hint: If you don’t have non-stick spray, you can wipe your slow cooker vessel down with olive oil.

Variations

If you want to personalize this cheesy kielbasa hashbrown casserole or don’t have certain ingredients on hand, we have some variations here that will help.

Fresh Potatoes – If you don’t have frozen hashbrowns, you can simply cube up fresh potatoes.

Onions – Any onion will do. If you happen to have a sweet onion on hand, use that. Even red onions work.

Cream – If you don’t have milk, cream is an excellent alternative.

Make it Spicy – Try adding some red pepper flakes to give this recipe a kick of heat.

Cheese – Aside from cheddar cheese, Colby, Monterey Jack, and Colby Jack work very well in this recipe.

Creamed Soup – This recipe calls for cream of chicken soup, but you an also use cream of mushroom or celery.

Storage

This casserole will keep well in the refrigerator for three to four days. For longe storage, you can freeze it for up to a month.

Tips

A Sharp Knife – When dicing your onion, a sharp knife is your friend. Even cuts will help you get a nice dice, and a sharp knife makes for even cuts.

Shred Your Own Cheese – Of course, it’s faster to buy shredded cheese, but for the best flavor possible, shred your own cheese using a cheese grater and a block of cheese.

Ingredients

  • 1 32 ounce bag frozen cubed hash browns, thawed

  1. Could I use diced ham instead of sausage

    1. Hi Janice I don’t see why not. Both are cooked meats. I would just cut the ham so it is about the same size as the kielbasa. Maybe check the cook time. Kielbasa has some fat in it ham is leaner so you don’t want it to overcook and be dry.

    1. We never have but I would think 6-7 hours. Just keep an eye on it

    Wonder how to do this not in slow cooker, mine won’t heat up.

    1. You can try it on the stove top. Put everything in a pan or pot except for cheese and saute and cook. But I don’t know for how long as I have never done it that way. You may have to add a bit more liquid
