Cheesy Vegetable Soup Recipe – This cheesy vegetable soup is amazingly delicious , simple to make and SO hearty. It’s creamy, full of chunky vegetables and always a hit!
Cheesy Vegetable Soup is like comfort food in a bowl. We love soups, chowders and stews all year long. Even in the heat of the summer we are having a bowl of chowder, stew or soup. But come Fall it’s full on soups, chowders and stews in our house.
This vegetable soup or some would call it a chowder even because it’s so thick and hearty is very versatile as far as the veggies go.
Sometimes we will add corn, onions, spinach, zucchini, basically any vegetable you like to this recipe. We pretty much keep it simple but sometimes it’s nice to change things up and a good way to clean out the refrigerator.
A bowl of this soup topped with some cheddar cheese some crusty bread maybe a salad and you have a nice lunch or dinner. The hardest part of making any kind of chowders, soups and stews of course is the chopping of the vegetables.
So sometimes I tend to chop them bigger than I should lol. Hey whatever works for you right? If I have time and patience I take my time but sometimes I actually like the bigger veggies. It really depends on the soup or chowder. In this chowder we cut the veggies a bit larger
Here’s how simple it is to make!
2 tbsp butter
1/2 cup chopped onion
2 cups chopped carrot
2 celery sticks, chopped
2 tbsp garlic cloves, chopped
8 cups chicken broth
4 large baking potatoes, washed and chopped
2 tbsp, flour
1 cup water
1 cup milk
4 cups broccoli, chopped
4 1/2 cups cheddar cheese
Melt the butter in a large pot. Add onions and saute until translucent.
Add carrots and celery and cook over medium heat until tender.
Add garlic and cook and addition 1-2 minutes. Add potatoes and chicken broth and bring to a boil cook until potatoes are slightly tender.
Mix flour with water, add and simmer until soup is slightly thick. Add milk and broccoli and simmer until broccoli is just tender and soup is heated through. Stir in cheese and allow to fully melt.
Ladle into bowls add some extra cheddar cheese on top and serve with some buttery crackers, crusty bread and enjoy!!
