  1. Add the sliced onions, peppers and sausage to a large skillet. Cook until tender.

  1. Add the finely minced garlic, salt and pepper, and Italian seasoning and cook for about 30 seconds before adding the white wine. Let it reduce by about half.

Ingredients

  • 1 pound ground italian sausage
  • 1 medium sized onion
  • 2 medium green bell peppers
  • 4 garlic cloves
  • 1 teaspoon italian seasoning
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup white wine – or broth
  • 28 ounces crushed tomatoes
  • 2 teaspoons fresh basil
  • 2 teaspoons fresh parsley
  • Parmesan to garnish

Instructions

  • Cook pasta according to directions on the package, drain and set aside.
  • Thinly slice the bell peppers and remove stems and seeds and place in a large saute pan with tall sides.
  • Thinly slice the onion and add it to the pan.
  • Crumble the sausages into large pieces and add to the pan.
  • Cook over medium heat until the onion and peppers are soft.
  • Add the finely minced garlic, salt and pepper, and Italian seasoning and cook for about 30 seconds before adding the white wine.
  • Let it reduce by about half before adding the crushed tomatoes and fresh herbs. Stir to combine and let simmer on medium/low heat for about 10 minutes.
  • Add the cooked pasta into the sauce and stir well to coat the noodles.
