We’re always looking for a fun treat that we can eat ourselves or share with our family and friends. And honestly, it’s nice to have a plate of cookies just sitting around for people to snack on when they come over. They are kind of crispy and and chewy all at the same time! We just LOVE that combination. It’s like the best of both worlds.
Throughout our years of cooking, we’ve managed to bake up hundreds, if not thousands, of delicious homemade cookies…but these Pumpkin Spice Sugar Cookies are some of our favorite ones to make.
Not only do they signal that fall is here but they have a great subtle flavor of pumpkin as well.
What if I don’t have any pumpkin pie spice mix?
Don’t fret, the recipe can still be made. If you find out that you don’t have any of the pumpkin pie spice mixes in your cabinet, you can swap it out for some extra cinnamon instead. The pumpkin flavor might be a bit less in the end but you can rest easy knowing that they’re still going to taste absolutely delicious.
Pumpkin pie spice mix consists of ground cinnamon, ground ginger, ground nutmeg, ground allspice, and ground cloves. So you can add a little of of if you have them but if you don’t have pumpkin pie spice I would just use cinnamon and you will love them just the same!!

These pumpkin spice sugar cookies are full of delicious flavor and have the perfect chewiness to them. Just a little bit of crispiness and the right amount of chew gives everyone what they want.
How do you whip up these cookies? So easily!! Just take a look!
- In the mixing bowl of a stand mixer, (or a large bowl if using a hand mixer) place the butter, pumpkin, sugar, eggs, vanilla, and milk, and blend until smooth and creamy.
- a separate bowl, mix the flour, pumpkin pie spice, baking powder, and salt, until well blended.
- Add the flour mixture to the mixing bowl, and mix on low until the ingredients are blended. Scrape down the sides of the bowl, and mix again.
- Line 2 cookie sheets with parchment paper, and drop the cookies by the tablespoonful onto the parchment paper about 2 inches apart.
- Sprinkle the tops with cinnamon sugar mixture if desired.
- Bake the cookies at 375 for 10 -12 minutes, or until cookies are golden brown. Remove cookies from oven to a wire rack to cool. Serve and Enjoy!
How do I know when the cookies are done baking?
For these cookies, you need to go by how they look. When they start to turn golden-brown in the oven, it’s time to pull them and let them harden and cool on the counter.
I like to add a dash of sugar and cinnamon on top of them as well before I stick them in the oven so that it gives them just a little dash of sweetness with every single bite.
