Asparagus is our favorite vegetables and making oven roasted asparagus could not be easier or more delicious. We love roasted vegetables so much better than any other way of cooking them. and they are so easy to make. The simplest of ingredients can give you the most amazing flavors. Just some garlic, lemon, salt and pepper and your done!
We truly love asparagus so when springtime comes and it’s on sale we have it probably a couple of times a week! That might seem a little much for some but we really do enjoy it. In the summer we throw it on the grill. It really is so versatile. We love any leftovers in an omelette with some swiss cheese.

Your going to wash your asparagus and need to dry it or what I do is wash it earlier in the day if I can and set it on a dish towel to dry. you want to do this so the olive oil will stick to the asparagus. Once the asparagus is dry Place it on a baking sheet with parchment paper.
This gives you perfectly roasted asparagus with crunchy, crispy garlic bits and just the right amount of crispiness. We like our asparagus crisp but tender so we usually never buy asparagus that is too thin. They never have enough crispiness for our family.

Roasted Garlic Asparagus
Ingredients
- 2 lbs asparagus
- 2 tsp sea salt
- 2 tsp minced garlic cloves, more if you like
- 1 ½ tsp lemon zest
- 2 tbsp olive oil
Instructions
- 1. Preheat oven to 400 degrees F.2. Wash the asparagus with water. Dry well. Place on baking sheet with parchment paper.3. Drizzle olive oil over asparagus and toss. 4. Top with salt and toss garlic and lemon zest over asparagus.Toss with your hands or a tong. Bake for 13 to 15 minutes until asparagus is tender. Remove from oven.
