🔪 How to Make Snickerdoodle Cheesecake Bars

Making these bars is much easier than you might think. This recipe is easy to make, even for beginners. Just follow the instructions, and you’ll have delicious cheesecake bars in no time!

Step 1: Prep

Preheat the oven to 350 degrees and spray a 9×13 baking dish with non-stick spray.

Step 2: Make the Crust

Pulse the graham crackers into fine crumbs in a food processor. Then, add the pecans and pulse until finely ground. Finally, add the melted butter and pulse until it begins to form clumps. Press the mixture firmly into the bottom of the baking dish. Set aside.

Step 3: Make the Cheesecake Filling

Beat the cream cheese, sugar, eggs, vanilla, and cinnamon until creamy and smooth. Pour the mixture over the crust and set aside.

Beat the sugar and butter until light and fluffy. Then, add the egg and vanilla and beat again until combined. Add the flour, baking powder, salt, and cinnamon and mix until thoroughly combined. Then, add the chopped pecans and mix again.

Step 5: Cover the Cheesecake

Break the dough up with your hands and evenly distribute it over the cheesecake layer.

Step 6: Bake

Top with cinnamon and sugar. Bake for 30 to 35 minutes until firm.

Step 7: Chill

Ingredients

For the crust

  • 12 full sheets cinnamon graham crackers
  • ½ cup pecans
  • ½ cup butter melted

For the cheesecake layer

  • 16 ounces cream cheese softened
  • ¾ cup sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • ½ teaspoon cinnamon

For the cookie layer

  • ¾ cup butter softened
  • 1 ½ cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups flour

Instructions

  • Preheat the oven to 350 degrees.
  • Prepare a 9” x 13” baking dish by spraying it with cooking spray.
  • In a food processor, place the graham crackers and pulse until you have fine crumbs.
  • Add in the pecans and pulse until they are finely ground.
  • Add the melted butter and pulse until the mixture starts to form clumps.
  • Pour into the bottom of the baking dish and press down firmly until you get an even layer. Set it aside.
  • In a large mixing bowl, beat the cream cheese, sugar, eggs, vanilla and cinnamon for about 3-4 minutes on high. The mixture should be creamy and smooth.
  • Carefully pour over the graham cracker layer.
  • Set it aside.
  • In a large mixing bowl, beat the sugar and butter until light and fluffy.
  • Add in the egg and the vanilla and continue to beat.
  • Add in the flour, baking powder, salt, and cinnamon and mix until the ingredients are thoroughly incorporated.
  • Stir in the chopped pecans until well mixed.
  • Using your hands, break the cookie mixture into small pieces and cover the cream cheese layer as much as possible.
  • In a small bowl, whisk the remaining sugar and cinnamon together.
  • Sprinkle evenly over the top of the entire dish.
  • Place the bars in the oven and bake for 30-35 minutes. It should be firm.
  • Cool overnight, or for at least 4+ hours before slicing into bars.
