Creamy Dill Cucumber Tomato Salad

 This Creamy Dill Cucumber Tomato Salad is so simple to make and is one of our go to summer salads.  The perfect side dish with all your grilled burgers, meats and fish! 

Do you need the easiest salad ever? If the answer is yes than you need to make this one!  I don’t know if you would really call it a salad or a side dish. We call it easy and delicious.

Sliced tomatoes, cucumbers, and onions are tossed in a creamy dressing made from mayonnaise, sour cream, cider vinegar, garlic and dill. You can’t get easier than that! 

Creamy Dill Cucumber Tomato Salad is a delicious summer salad when the tomatoes are fresh and bursting with flavor.  Once the cucumbers start coming in, we are overloaded with them! So this is a perfect way to use some of  your garden veggies.

The best thing about this salad is it gets better as it sits. Let it sit over night and the flavor is even better. Just make sure your tomatoes aren’t too soft if you are going to do that.

I mix the dressing part and let it set for about 2 hours or so in the fridge.

Then it comes time to chop and slice the tomatoes, cucumbers and onions then mince the garlic. Place it all the bowl that you have your dressing in and lightly toss it all together. Pretty simple right? Easy enough for your family’s weeknight dinner and delicious enough for a BBQ.

 

 

 

So when you need a super simple easy side dish whip this one up! We make this a couple of times a week at least in the summer. Have to use those garden tomatoes and cucumbers.

Ingredients

  • 1 medium tomato, cut and chopped
  • 1 medium cucumber ,peeled
  • ½ small vidalia onion, sliced thin you can use any kind of onion you like
  • 1 garlic clove, minced
  • 1 tsp apple cider vinegar
  • 1 ½ tbsp mayo
  • 1 ½ tbsp sour cream
  • salt and pepper to taste
  • ½ - 1 tsp dill

Instructions

  • In a medium bowl mix mayo, sour cream, minced garlic, apple cider vinegar, salt, pepper and dill. Stir well , cover and set in fridge for 1-2 hours. ( this isn't necessary but I like the flavors better)
