Thick rich and fudgy these Grasshopper Brownie Bars have the perfect layer of mint cream cheese buttercream icing to top them off!
We are huge brownie fans in our house. Add some mint to that brownie and your talking drool worthy to us! You know those Andes chocolates? We always have them in our freezer. They are amazing frozen.
Chocolate and mint go together so perfectly especially in these easy to make Grasshopper Brownie Bars. This one starts out with a brownie mix. Now you can certainly make your own homemade brownie mix to use for this recipe. But sometimes we just want something quick and simple.
Maybe your spending enough time on dinner and want a simple dessert. If I can make a cake mix dessert or brownie mix taste amazing I’m all for it.

These are great for St.Patrick’s Day or Christmas or just because you need a chocolate and mint fix. Nobody will be turning down these fudgy brownies with that great thick fluffy buttercream frosting.
What will I need to make Grasshopper Brownie Bars?
Brownie mix (family size to be made in a 13×9 inch pan)
Ingredients to bake brownies according to package directions
½ Cup Butter (Softened)
½ Cup Cream Cheese (softened)
2 ½ Cups Powdered Sugar
2 tsp Vanilla Extract
1 tsp Peppermint Extract
Green food coloring
¼ Cup Mini Chocolate Chips
How do I make my Grasshopper Brownie Bars?
- Bake brownies according to package directions, allow to cool
completely. ( I like to under bake just a bit) - Bake brownies according to package directions, allow to cool
- Beat butter for 4-5 minutes this will give you a light and fluffy buttercream frosting
- Blend together cream cheese and butter.
- Add powdered sugar a little at a time, beating between
additions until well incorporated - Add in vanilla and peppermint extracts and continue beating.
- Add in green food coloring a few drops at a time until
the desired color is achieved (I used about 8 drops) - Spread frosting in a thick layer on cooled brownies.
- Sprinkle mini chocolate chips across the top.
- Cut into 24 square pieces and serve.
Do you have to add green food coloring to the frosting?
You sure don’t! But why not? It sure is pretty, makes a statement and when it comes to frosting we are all about that being THE BOMB! That is what makes this “Grasshoppery”!
Can I use less frosting on my brownies?
You sure can. If frosting isn’t your thing you can cut it in half, use less, just use a little bit. Really whatever makes you happy. There is no rule to this recipe. We have tried it a couple of different ways and are sharing our favorite way with you.
We love this buttercream frosting. The key to making a light and fluffy buttercream frosting is whipping the butter for a good 4-5 minutes before you add anything else to it. Whip, whip ,whip and you will get that fluffy frosting and not that heavy frosting that well.. nobody likes.
