It’s almost blueberry picking season and that means fresh blueberries everywhere! But this fudge is a treat we make for every occasion. some people might think this is a summer fudge recipe. But this has become one of our most requested desserts for the holiday. And it is always in our gift bags or dessert tray for a get together.

This is so good, and the color is really great to liven up a buffet or dessert table. This recipe brings two old favorites together in a beautiful blend for any occasion. This is really easy, and you can make it a day or two ahead, so it’s ready when you need to serve it. It’s sweet and silky, and a great homemade dessert. Everyone is sure to love this.

How to make Blueberry Muffin Fudge:
- Line the bottom of a 9 X 9 inch square pan with parchment paper, and set aside.
- In the mixing bowl of a stand mixer, mix the butter, sugar and vanilla until smooth.
- Place the flour in a microwave safe bowl, and microwave for 1 minute, then remove from microwave and stir – flour will be hot. Place flour back in microwave for another 15 seconds, remove and stir again. Add flour to mixing bowl, and blend until well combined.
- In a microwave safe bowl, add the Eagle-brand milk, and White Chocolate, and melt on 15 second intervals, until smooth and creamy. stir well to blend.
- Pour melted milk/white chocolate into mixing bowl and blend. Scrape down side of mixing bowl, and blend again
- Add blueberries, and blend on low just a couple of turns.
- Add blue food coloring gel, and turn mixer on low to swirl, just one turn around the bowl. The add purple food coloring gel, and mix again, but just one turn around the bowl.
- Remove bowl from mixer, and pour fudge into dish.
- Spread evenly with the back of a spoon or spatula, and place the dish in the refrigerator, overnight for best results.
How to make the topping:
- Line a cookie sheet with parchment paper. In a bowl, place the oatmeal, brown sugar, vanilla and honey, and stir all together until well blended.
- Spread the oatmeal mixture out on the parchment paper, and place in the oven at 400 degrees for about 10 minutes. You must watch this in the oven, or it will burn.
- Stir the topping a couple of times while in the oven, and once it has begun to turn golden brown, remove and set aside to cool.
- When you’re ready to serve the fudge, cut in 2 x 2 inch squares, sprinkle with the oatmeal topping and a few blueberries.
Will the blueberries turn this fudge blue?
The added blueberries will help, but it won’t be that bright of a color. This is why we suggest adding in a few drops of food coloring to assist in getting that fun blue color! Just be careful not to add too much…you don’t want a bright blue or dark purple fudge as there’s a chance that might stain your teeth.
Can you use frozen blueberries for this recipe?
We don’t recommend it. We have found that if you use frozen blueberries, they release a lot more liquid as they thaw. This can cause an issue with recipes because it can really water down the recipe and cause it to have issues. Fresh blueberries are best. Just make certain that you wash them and choose ones that don’t have any little stems attached. You’re going to be adding them in and on top so you’ll need to have quite a few!
Should I refrigerate the fudge?
You don’t need to refrigerate fudge unless you like it cold. Keeping it at room temperature is fine. It will be softer and creamier at room temp. Either way make sure you place it in an airtight container so it doesn’t dry out.
Can you freeze blueberry fudge?
You sure can! You can easily freeze this fudge recipe. We wrap it tightly in plastic wrap then place it in freezer-safe bags. Freeze for up to 3 months. Thaw in the fridge before serving.

Notes
Can this be made with almond or coconut flour?
We’ve never tried it but I don’t see why not. If your used to using those flours you can try it. Coconut flour is very dry so I think I’d use almond instead
Can the oatmeal be substituted for something else? My son absolutely loves blueberries and I think he would love this. However, he absolutely hates oatmeal and will refuse to even taste anything if he even suspects there’s a hint of it in his food!
The oatmeal is just on top so you could just eliminate that part all together. honestly the oatmeal doesn’t taste like oatmeal since it’s mixed with brown sugar ect and baked in the oven to make it crispy. Or you could try some coconut instead. We make the topping sometimes and use it for a topping for smoothies, ice cream.
Why do you microwave the flour?
It kills any harmful bacteria that may be present and makes raw flour safe to consume
I don’t own a microwave, is there another way to do the flour?
You can do it in the oven at 350 for about -10 minutes. Make sure it is spread out on parchment paper
