Once fall rolls around we are in full pumpkin mode! We don’t need an excuse to use pumpkin in anything in our house.

When we first made this pumpkin bread pudding we immediately fell in love. We are huge pumpkin lovers in our family. We have so many favors from savory soup to desserts. The trick is to stock up on cans of pumpkin so we never run out and can cook with it all year long. Pumpkin bread pudding made with pumpkin happens to be a favorite.

We decided one day that this pumpkin bread pudding needed a little extra something and added some caramel sauce to it. Wow it was amazing!

Crockpot desserts are always a big hit with our family and this bread pudding made with pumpkin is especially delicious. The whole house smells warm and cozy with the smell of Fall as it is cooking.

Crockpot Pumpkin Bread Pudding with Caramel Sauce

This caramel sauce is so simple to make. It’s not make in the crockpot but rather poured over the bread pudding after it’s done cooking or when it’s ready to eat. It consists of just a few ingredients.

  •  Butter
  • Brown Sugar
  • Milk
  • Maple Syrup

What other toppings go well with bread pudding?

While this slow cooker recipe calls for caramel sauce drizzled on top, you can easily use any type of topping that you want. Another option is a scoop vanilla ice cream. Especially when it is warm the ice cream is so good! Don’t forget to drizzle that caramel sauce over the ice cream!

Whipped cream is a great topping choice and can be easily added to the top of your bread pudding with ease. You can also sprinkle on powdered sugar as well.

 Some people also prefer to have their bread pudding made without any sort of toppings so that is an option, too. If you prefer to eat your bread pudding plain, you can totally do that! That’s a good option for breakfast if your looking for something sweet I think.

How do you store bread pudding once cooked?

Bread pudding is a simple dessert to make and takes minimal effort to cook. (and cooking it in your slow cooker is an even easier process!) If you’re ready to cook up your bread pudding and have some leftover, don’t worry. Leftover bread pudding is one of the easiest baked items to store.

All you need to do it store it in an airtight container with a lid. Keep it in the fridge and once you’re ready to eat it, you can enjoy it cold or slightly warmed up as well.

Ingredients

FOR THE BREAD PUDDING:

  • 6 large Croissants – cubed (store bought)
  • 6 Jumbo pumpkin muffins – cubed (you could also use a loaf of pumpkin bread cut in cubes) (Store bought)
  • 1 package of cream cheese – softened – 8 ounce
  • 1 can of Pumpkin – 15 – 17 ounce size
  • 1 can of Eagle brand Sweetened Condensed Milk
  • 1 egg
  • 1 Tablespoon of Cinnamon
  • 1 teaspoon of Pumpkin pie spice
  • 1 Cup of Sugar
  • 1 teaspoon of Vanilla

FOR THE CARAMEL SAUCE

  • 1 stick of Butter
  • 1 cup of Brown Sugar
  • 1/2 cup of Milk
  • 1 teaspoon of Maple Syrup

Instructions

  • Spray the crockpot with cooking spray, and turn heat to high.
  • Place the croissants on a cutting board, or mat, and cut into 1 inch cubes.  Cut the jumbo pumpkin muffins into 1 inch cubes, and add both to the Crockpot, tossing with your hands to blend. Place lid on the crockpot.
  • In a large measuring bowl, or bowl with a pouring spout, place the 8 ounces of cream cheese, and place the bowl in the microwave. 
  • Microwave for about 1 minute, stirring half way through, to soften the cream cheese, making it easy to stir.  Stir the cream cheese with a large spoon until it's smooth and creamy.  
  • Stir in the sugar (1 cup) and keep stirring until the sugar is completely blended.  Add the can of pumpkin, and stir to blend. 
  • Add the Sweetened Condensed Milk, Egg, Cinnamon, Pumpkin pie spice, and Vanilla, and stir until blended and smooth.  
  • Pour mixture over cubed Croissants and pumpkin muffins, and stir to mix.  
  • Cook on high for about 1 to 1/2 hours, and then turn the heat to low, and finish cooking, for about 2 – 3 hours, or until a knife inserted in the middle comes out clean.

CARAMEL SAUCE:

  • In a heavy bottom sauce pan, over medium high heat, melt the butter.  Add the milk, and brown sugar, stir to combine, and dissolve the brown sugar.
  • When the sauce boils, turn the heat to low, and continue to stir, and add the vanilla.  This must be stirred the whole time it's cooking, or it will stick in the bottom. 
  • Continue to stir until the mixture begins to thicken. When it starts to thicken, keep stirring and cooking for about 5 minutes, then turn off the heat, remove the saucepan, and stir in the Maple Syrup. 
  •  If you serve this right away, it will stay the same consistency.  If you serve at a later time, the sauce may thicken until it resembles thick cold gravy, but don't worry.  Just put the pan back on low heat, and stir in about 1 Tablespoon of butter, and a few drops to several drops of milk, and stir. 
  • The sauce will begin to thin. Just keep adding a few drops of Milk at a time until you get it to the consistency you prefer.
  • To serve, you can either spoon the Bread Pudding from the crockpot, or cut it in pieces and remove it with a cake server.  Place the bread pudding on a dessert dish, or bowl, and spoon caramel sauce over the top.  Enjoy!

Notes

NOTE:  You can also serve this with Whipped cream. 
Since Crockpot’s cook a little differently, just watch the Crockpot to make sure it doesn’t start to burn in the bottom when it’s on high.  You may need to turn it to low right at the one hour mark, or it may take the additional half an hour to cook a bit more before you turn to low. 
ALSO:  The Croissants and Jumbo Pumpkin muffins can be purchased at your local market. If you can’t find the pumpkin muffins, but the store has pumpkin bread in loaves, that will work fine.  You’re going to cube them, so it doesn’t really make that much difference if it’s a muffin, or a loaf.  The beauty of Bread Pudding is using what you have or can find, and it will still come out delicious when you add the pumpkin cream cheese mixture, and the Caramel sauce.
