🔪 How to Make This Southern Tomato Pie

Place the pie crust on a pie plate, and then poke the crust with a fork. And, bake in a 375 degree oven for 10 minutes. Remove and cool. While the crust cools saute the onions in butter.
Meanwhile, slice the tomatoes and dry them with paper towels.
In a medium sized bowl, combine the cheese, garlic, basil, green onion, mayonnaise, onion powder and black pepper. Stir to mix well.
Start assembling the pie by placing a layer of tomatoes on the bottom. Cover with about half of the cheese mixture and spread in an even layer.
Repeat the layers, first tomatoes, then the cheese layer, then top with the caramelized onions.
Place in the oven and bake for 30 minutes. Remove and let cool slightly before slicing and serving. Garnish with fresh basil or parsley if desired.

Ingredients
- 1 premade pie crust
- 5 tomatoes
- 1 teaspoon salt
- 1 large onion
- 1 tablespoons butter
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 3 garlic cloves
- ¼ cup fresh chopped basil
- ½ cup chopped green onions
- ¾ cup mayonnaise
- ½ teaspoon onion powder
- ½ teaspoon black pepper
Instructions
- Preheat the oven to 375 degrees.
- Unroll the pie crust and place it in a pie tin and crimp the edges.
- Poke the bottom with a fork and bake for 10 minutes. Remove and let cool.
- Reduce the oven to 350 degrees.
- Slice the onion into thin slices and place in a large saute pan with the butter.
- Saute over low heat for about 15-20 minutes until the onions are caramelized.
- Slice the tomatoes into thin slices, about ¼” thick and lay on paper towels in a single layer.
- Sprinkle the salt over the slices and allow the juices to drain into the towels.
- Cover with another layer of paper towels and press down to make the tomato slices as dry as possible.
- In a medium sized bowl, combine the cheeses, garlic, basil, green onion, mayonnaise, onion powder and black pepper. Stir to mix well.
