We make this easy taco pasta with whatever pasta we have on hand but prefer shells. We like how the sauce and cheese nestle in the little cups of the shells.

You can make this taco pasta as cheesy as you like it. We added 1 cup of cheese to the recipe to start. You can add extra if you like up to an extra cup or so. We like to serve extra cheese at the table so family members can add more cheese as they like. Although we have been known to add more cheese from the very start sometime too. Just wing it as you see fit! We all love extra cheese after all.

When we were looking for yet another taco past recipe we wanted something to be simple yet full of flavor. We make this taco pasta recipe often and love it Creamy Cheesy Taco Pasta Bake. It is cheesy and so easy to make.
One Pot Cheesy Taco Pasta
We love that this meal can be made in one pot. One pot cheesy taco pasta can be made all in the same pot from start to finish! I don’t know about you but that’s a huge plus for us. Not having a bunch of pot and pans to deal with yeah!!
One pot cheesy taco pasta is the way to go for sure. And the meal is done is less than 30 minutes so it’s perfect for a weeknight meal. We just love an easy one pot wonder especially if the family approves. Who want to make a meal and then have everyone turn their nose up at it?! No me!
That does not happen with this cheesy taco pasta. This pasta is cheesy creamy and full of the taco flavor the family loves.
Cheesy taco pasta is very versatile too. If you don’t like black beans you can swap them out for let’s say pinto beans. Or if you have leftover corn in the fridge throw that in. We change this recipe up all the time. Feel free to make it your own.

This one is a great one for when your looking to save a little money and a little time. We always buy ground beef when it’s on sale and package it for the freezer so we are well stocked.
Budget friendly meals can easily be made if you shop when things are on sale. We stock up on everything from freezer foods to pantry staples. So this way we never have to pay top dollar for anything.
If you don’t shop this way you should really start. We have a full wall of shelves in our basement that we have for non perishable items.
Budget and Organized!
Being organized so it is neat and easy to run downstairs and grab something if I need it is key. We have a pantry in our kitchen upstairs too so when I am getting low on something I can just restock it.
We have everything from pasta, soups, stuffing mixes, crackers, salad dressings, condiments, sugars, flour ect. And of course we have cleaners, aluminum foil, storage, freezer bags, plastic bags of all sizes.
We have so much more I can’t name everything. But we will never run out of anything that’s for sure. And we always donate to our food pantry. Giving back is important.
Creamy Cheesy Taco Pasta
If you would like this to be a bit creamier you can add a 1/4 cup of heavy cream to the mixture just before you add in the cheese. We go back and forth with this step. It’s delicious either way. the cheese makes it creamy so you don’t have to add the heavy cream but it does make it a bit creamier.

Cheesy Taco Pasta
Ingredients
- 1lb. ground beef
- 1/2 lb. shell pasta
- 2 tablespoon. olive oil
- 1 medium onion chopped
- 1 red bell pepper chopped
- 1 teaspoon minced garlic
- 1 tablespoon chili powder
- 1 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup prepared salsa
- 1 15oz. can of black beans
- 1 cup shredded cheddar cheese ( up to 2 cups)
Instructions
- In a large pan bring water to boil. Add shell and cook Drain and set aside.
- Cook ground beef until browned, drain excess fat and set aside.
- Heat olive oil and add chopped onion, bell pepper, and spices, stir.
- Add ground beef back into pan and then add black beans and stir thoroughly
- Add salsa, 1 cup of water, salt, pepper, and stir again.
- Add shells to ground beef mixture, stir, add cheese, stir again, and serve.
