Death by chocolate. It’s a term we’ve all heard before, and we think if you have to go, that’s the way to do it! This delicious dessert is one of our favorites to make when we really want to wow people but we really don’t want to do a lot of work.

🔪 How to Make Chocolate Ganache Tart

This recipe might look fancy, especially when you read the word “ganache”, but it’s actually very easy to make.

Step 1: Make the Chocolate Crust

Pulse the chocolate cream cookies in a food processor until they’re fine crumbs. Mix with melted butter in a medium bowl until fully combined. Then, press the mixture into the bottom and up the sides a bit of a 9-inch removable bottom tart pan.

Step 2: Bake

Bake the crust for 8 minutes at 350 degrees. Remove the crust from the oven immediately, and cool it on a wire rack for 15 minutes.

Step 3: Make the Ganache

Add the chocolate chips to a medium heat-proof bowl. Heat the heavy cream and butter over medium heat until tiny bubbles form around the edges of the saucepan. Immediately remove it from the heat and pour it over teh chocolate chips.

Let the mixture stand for 2 minutes, then gently mix it with a spatula until it’s smooth and silly.

Step 4: Fill the Crust

Pour the ganache into the crust and smooth with a spatula. Then, refrigerate a minimum of 4 hours to set.

Step 5: Garnish and Serve

Remove the sides of the tart pan and place it on a serving dish. Then, garnish with your choice of toppings, slice, and enjoy.

Store this covered in the refrigerator for up to 4 days. For longer storage, you can freeze it in an air-tight, freezer-safe container for up to 4 months.

💭 Tips

  • 4 hours is the minimum chilling time for this tart, but overnight is better.
  • If your tart won’t release from the sides of the pan, give the pan a quick hit with a kitchen blow torch.
  • If you top your tart with fresh berries, be sure to remove the from the refrigerator an hour before serving the tart, and leave them on a paper towel to absorb any moisture.
  • DO NOT let your cream and butter mixture simmer or boil when making the ganache. As soon as bubbles appear at the edge, remove the pan from the heat. Otherwise, the mixture will curdle.

Ingredients

Chocolate Crust

  • 24 chocolate cream-filled sandwich cookies
  • 7 tablespoons unsalted butter melted

Ganache Filling

  • 1 cup bittersweet chocolate chips
  • 1 cup milk chocolate chips
  • 1 cup heavy cream
  • ½ stick butter cubed

Optional Garnish Options

  • Shaved chocolate
  • Broken cookies
  • Sliced almonds
  • Chocolate covered almonds
  • Ferrero Rocher
  • Dried edible flowers

Instructions

  • Preheat the oven to 350° F.
  • In a food processor pulse the chocolate cream-filled sandwich cookies until ground finely into crumbs.
  • Pour the crumbs into a medium bowl. Add the melted butter and mix with a spatula until fully combined.
  • Pour the mixture into a 9-inch removable bottom tart pan.
  • Press the mixture onto the sides and bottom of the tart pan with clean hands and a spatula.
  • Place the tart pan into the oven. Bake the crust for 8 minutes.
  • Immediately remove from the oven and place the pan on a wire rack and allow to cool for 15 minutes.
  • Place the bittersweet and milk chocolate chips into a medium heat-proof bowl and set aside.
  • Over medium heat stir the heavy cream and butter until tiny bubbles form around the edges of the pan. Immediately remove from the heat. Do not allow the mixture to simmer or boil. Pour the mixture over the chocolate chips.
  • Let stand for 2 minutes.
  • Gently mix with a spatula until smooth and silky.
  • Pour the ganache over the crust and smooth with a spatula.
  • Refrigerate for at least 4 hours until fully set.
  • Use a blow torch 3-4 inches away from the top of the tart to remove the bubbles and to make for a shiny glossy finish before serving.
  • Remove the tart from the removable sides and place it on a serving dish before cutting.
  • Garnish with your favorite toppings.
